Hi all! How was your weekend? We made sure we checked off all our todo’s yesterday just so we could relax today. This morning I baked up a batch of Nectarine Muffins that are super moist and only 3 WWFreestyle Smartpoints each. Deal!
I’ll be posting the recipe later this week.I had one muffin and a Tall 1/2 caffeine nonfat iced latte with caramel on top (5 sp). I also had a little watermelon as I cut up an entire watermelon for this week’s snacks.
Have you all had or do you remember Suddenly Salad? I am pretty sure my mom made this when we were growing up but I do not remember. I remember rice a Roni and pastaroni.
The Husband picked it out this weekend and asked if we could have it.I said sure even though it’s not totally my thing and I knew I’d be making it healthier adding in zero point foods with light mayo/Greek yogurt.
Simply cook the pasta and veggies. Then rinse in cold water, draining thoroughly. Yep, he totally noticed the peas but ate them anyway lol.?While the pasta cooked, I chopped up tomato, carrot, bell pepper, celery, green onion, basil and some buffalo chicken.
*You could add beans instead to keep this Vegetarian.Toss the veggies and pasta in a bowl.I whisked the Salad Season Mix with 1/4 cup light mayo, 1/4 cup 0% Greek yogurt and 2 Tbsp milk.Toss, add a little pepper and you have Suddenly Salad – Viola!I definitly think you need the crunch and flavor from the veggies while the buffalo chicken added a spicy bite with protein staying power.

I also had 1 Tbsp of sunflower seeds (1 sp).I had planned on green beans with our dinner but I wasn’t feeling it. The Husband cooked us ribs with corn on the cob.
