#FlashbackFriday and grill up a batch of this almost zero Smartpoint Thai Lime Chicken for Memorial day.
Happy Monday all! I hope you all had a fantastic weekend. It sure sounds like it by reading all your weekend highlights. This morning I took advantage of being up bright and early by hopping on the treadmill to get my 30 minute jog/walk on. I am always amazed at how tired I feel when I get up before I work out and how awake I feel after my morning workout. It’s like you “almost” do not need coffee…..almost!
For breakfast, I went back for my usual ~ Healthy Egg Roll. My new favorite cheese to use is Sargento Ultra Thin Slices….you get the real deal for only 1-2 points+ a slice. (4 points+)
I am not sure if I have ever told you all this or not, but, my Mom is a Lifetime Weight Watcher member who still goes to meetings every week. She will often mail me copies of recipes that she gets at her meetings or tries out. Yep, sometimes our phone calls are all about us geeking out about the latest recipe we tried and what went into it.
She sent me two recipes last week from one of her Weight Watcher friends that I have been dying to try out. They are both Weight Watcher Friendly, Simply Filling and Thai inspired. How much better does it get than that?
This Thai Grilled Jalapeno Chicken is super easy to make. You whisk together the sweet and spicy lime marinade, let it soak up all that deliciousness for 1-8 hours, then, put it on the grill to add a little smokiness. It is completely delicious as a main, on top of a salad or whip up a veggie stir fry and put everything on top of a brown rice bowl.
THAI GRILLED JALAPENO CHICKEN (print it!)
INGREDIENTS:
- 1/3 cup fresh lime juice, about 2-3 limes
- 1/4 cup honey
- 2 Tbsp. soy sauce
- 2 Tbsp. fresh cilantro leaves
- 3 jalapeno peppers, halved and seeded
- 3 garlic cloves, minced
- pinch of freshly ground black pepper
- 1 lb. boneless, skinless chicken breast, (about 4 oz. each)
INSTRUCTIONS:
1. Whisk together the lime juice, honey and soy sauce. Stir in the cilantro leaves, jalapeno, garlic and pepper. Pour mixture over the chicken, cover/seal and allow to marinate for 1-8 hours.
2. Heat grill to medium heat. Remove chicken and reserve marinade. Place the chicken on the grill rack and cook for about 12 minutes per side, basting occasionally with the reserve marinade. Discard the marinade and serve chicken.
Makes 4 servings, 1 Smartpoint, 4 points+ or Simply Filling + 0 WPA
Nutritional information per serving for all ingredients;
I served up 3 oz. of chicken over a bed of organic farmer’s market greens with red cabbage, carrots, lemon cucumber, bell pepper, green onion, and cherry tomatoes from our garden.
Before serving it, I added some crunch and chew with 1 Tbsp. dried cranberries and 1 Tbsp. sunflower seeds. Keeping with the lime flavor, I used 1 Tbsp. Newman’s Light Lime Vinaigrette.
Sweet, tangy, crunchy and filling all for 6 points+ (SF + 2 WPA)
I also couldn’t wait to dive into my mid-afternoon snack ~ I’ve missed having Fage 0% + Blueberry.
Have you ever pondered licking the inside of the container to get all the fruit filling?! I totally have….just sayin’, I can admit it when nobody is looking (3 points+)
Dinner was another variation of Pulled Pork Nachos and I think this was better than round 1!
The base ~ Homemade Baked Tortilla Chips topped with coarse sea salt. I use the Mission Extra Thin Yellow Corn Tortillas, slice 4 tortillas into 8 pieces to have 32 chips for 4 points+.
Spray with nonstick spray, sprinkle with sea salt and bake for 6-7 minutes.
Sprinkled with 3 oz. of homemade slow cooked BBQ pulled pork.
Plus a little real deal Monterey Jack Cheese (it melts better when it’s real).
I placed my dish back in the oven for 5 minutes to have it melt all over that bbq pork goodness.
Add all your toppers ~ romaine, tomato, green onion, cilantro, avocado!
And a little heat ~ Jalapenos & hot sauce! I cannot tell you how good this was…..I was totally sad when my plate was empty! The best part….the entire 32 chip dish is 12 points+!
After dinner, I made up a batch of White and Dark Chocolate Chip Walnut cookies for my friends birthday. I had one for “quality” check purposes. 4 points+

Gotta try those tortilla chips sine I have a pkg of those tortillas in the fridge and they’re on their way out 🙂 Those nachos look awesome…they make pork nachos at Hardrock Casino that we just go there for that, since we don’t gamble…we just go for the food and the shopping lol Gonna try to make them at home now…thanks as always 🙂
