My co-worker/friend wanted to treat me to lunch today to Thai Kitchen. I had such a great time getting caught up since we both have been too busy lately. It’s so funny because we didn’t realize how busy we both had been until last Friday when The Husband and I went to watch our nephew practice football. My co-worker’s son is on the same team – funny, huh?! Before heading out to lunch, I snacked on some grapes and a Low-Fat Sargento colby cheese.
We started off with their Thai Eggrolls. I always thought that Thai eggrolls were just in rice paper and not fried. I was totally hoping for the steamed version with peanut sauce. Oh well – these were good and I LOVED that sweet and spicy red sauce.
I picked the Won Ton Soup to start since I am pretty sure I will be having salad for dinner.
I didn’t want to venture out to try something new since the last time I had hot basil and it was funky. I ordered their Spicy Cashew Nut Chicken ~ YUM! I LOVE nuts in spicy stir-fries.
The brown rice was not cooked yet so I had their regular jasmine white rice instead. Everything was delish and I ate 1/2 of my chicken and all of my rice.
We stopped by to replenish the work ice cream stash post lunch. I am really proud of myself for picking up a separate box of the Weight Watcher English Toffee bars for me. This way I do not have to have ice cream envy and I can play along. I have to admit though, It really helped to see the nutritionals on Drumsticks (holy wow!!!)
I was pondering all morning long what I was going to make for dinner since I still haven’t gone to the grocery store. Thanks to The Husband for reminding me I do not have to cook tonight! Yeah…..
Tonight The Husband’s Mom is taking us out with our nephews since they all go back to school next week. I think we are heading to Chevy’s – I must resist the salsa and chips! They are soooo good that I think I could actually just have their chips and salsa for a meal. I think I will have to pre-portion out a serving and stick to that.
Ok, I know, you all are going to disown me if I don’t start cooking again soon…..I will, I promise I will feed your recipe addiction 🙂

Most of the thai restaurants I have been do call the fried ones egg rolls and the others ‘fresh rolls’. Maybe your restaurant makes a distinction too.
mmmm i love thai! but you already knew that. i cant believe you have not been eating thai forever and evvvver. it is so good. oh and chevys! we used to have one here but there was a huge shooting at it and it got shut down. it was so good. have fun!
I love thai!! The rice paper ones are usually called “summer rolls”
aw good for you for picking up some Weight Watchers ice creams so you can feel included! i do that all the time and i never feel deprived!

Pad thai and the mango coconut sticky rice dessert are my 2 most favorite thai dish. I agree with Shawnee…. i really should stop reading blogs on an empty stomach.
