That’s a spicy pepper….

Happy Monday all!  All day long I’ve been debating one thing ~ do I let myself get hooked on this season of The Bachelorette or do I just pretend it is not premiering tonight?  Part of me says yes, absolutely ~ I love cheesy reality TV and part of me says, it takes up 2 hours of my life every week and I cannot wait for next week!  Maybe I just decide to dive into a new book instead. Yep, these are the important things that ring through my brain all day.  The verdict….I still do not know LOL.

Since I pretty much fell off my tracker the past month or so, I decided this weekend that I wanted to hit the reset button and start tracking again like it is week 1. This week it’s pointsplus, but, I have no doubt I’ll be back to Simply Filling in the next week or two.

I started off my week with great news ~ I still managed to lose .6 lbs. despite the fact I have sporadically tracked for the last few weeks – yeah!

Breakfast started out with a cheesy Healthy Egg Roll (5 points+)

Mid morning I grabbed a Fage 0% Blueberry Greek Yogurt with these amazing organic blueberries that I picked up at the Farmer’s Market. (3 points+)

We actually had the chance to get out to enjoy the sunshine and head to the Napa General Store for lunch today.  I was super excited to break away from our Monday Lunch Meeting Sandwiches.

I picked the Vermicelli Noodle Bowl with Grilled Prawns which totally hit the spot.  I love this bowl because there are so many fun things to eat as you work your way through the salad.

“Layers of lettuce, rice noodles, shredded carrot, cucumber, mint, roasted peanuts, crispy onions, prawns and a crispy pork roll.” (14 points+ and worth every single one!)

I love that the cucumber is served as big stalks which made for fun dipping it in the spicy, rice vinegar soy dressing.

On our way back, we stopped at Annette’s for Ice Cream.  I decided to go with sorbet to save on points+ and picked the small 1/2 cup filled with a little sweet mango sorbet and tangy blood orange sorbet. (3 points+)

I have been waiting for the chance to open these Hot & Sweet Cherry Peppers that I picked up at Trader Joe’s.

The Husband wasn’t quite as excited as I was, but, what’s not to love about, sweet, spicy and peppers!  They are spicy but in a good way….promise!

While I’d never filled them with stinky cheese (ick!), we did chop them up for the perfect sweet kick to our Flat Out Amazing Veggie Pizzas!

While the oven heated up, I sautéed a little sweet onion, red pepper and mushrooms in a nonstick skillet to get the water out and make them caramelize in sweetness.  I topped them with a little garlic salt during the last minute to add another layer or flavor.

We made “his” and “hers” pizzas…..any guesses on whose is who?

Believe it or not, he is the organized one on the right…I just pile my toppings all over the place on the left.

His…sans the Sweet Cherry Peppers ~ he said they were too hot for him.

Mine topped with onions, peppers, mushrooms, sweet cherry peppers, tomatoes, olives, mozzarella and a little parmesan and pizza sauce….I should’ve added some green or something.

Sliced into 4!  I totally ate 4 pieces of pizza tonight Open-mouthed smile (6 points+)

Served up with a fast salad I just threw together for us ~ topped with 1 Tbsp. Newman’s Lite Lime Vinaigrette (1 points+)

I can’t wait to dive into tomorrow’s lunch ~ Here is a sneak peak of the Vegan Couscous Salad I prepared for the week.

STATS:

  • 32 daily points+, 7 WPA used, 42 WPA remaining
  • I fit in two walks today ~ at lunch and after dinner exceeding my 10K goal!

QUESTION OF THE DAY:

What is your favorite pizza combination?

My all time favorite is Ham and Pineapple but The Husband refused to have fruit on his pizza so it usually only shows up on my half.

    Well, I’m right there with ya…only I gained a few…but I’m back on the wagon again right along with ya! Another item, I see, to add to my TJ growing shopping list…October can’t come soon enough for me! Although we are REALLY trying hard not to eat out so much, one of my favorite things you do is show us how it CAN be done…there are many times I’ll be sitting at on of our favorite eateries..and yes, there are many…and as I peruse the menu I’m thinking: “hmmmm, wonder what Danica would pick?” Glad to have you back…somehow you make this journey so much fun 🙂

    These peppers are a MUST any time we visit TJ. They are amazing when stuffed with italian sausage and baked until the sausage is brown on top. YUMMMMMM

    Ah, pizza… a weekness in my family and a go-to staple when we’re to tired to think. Around here we have one called the Trio Pomodoro (three tomatoes). Sun dried tomatoes, fresh tomatoes, and tomato sauce ^_^ sprinkled with fresh mozzarella, fresh basil, and chunks or roasted garlic. I usually add hot peppers or sriracha to give it some kick, but this is hands down my all time fave. I should probably make some someday soon.

    I have tried the flat out pizzas and although I like the volume you can have for the points…they still taste diety to me. I have been getting Pizza Hut thin and crispy medium pizzas and it ends up being 5 points per slice so I save 10 for it and really enjoy it. Coupon code right now for $6 medium with 3 toppings… TEOMED3T6

    I’m right there with you on The Bachelorette. It has been my guilty pleasure, but I’m not sure if I want to commit to it:)
    I agree you make this journey so much easier and enjoyable. Thank you for the time and effort.
    I like to make my own crust – super thin (cooking light recipe) and I love chicken Italian sausage mushrooms bell peppers sweet banana peppers and onions

    Wow! Those peppers are a must try in my book. I love the simply filling and while I managed to keep 10 of the 35 lbs I lost last year off, I have lost an additional 18.8 since the beginning of the year. Great leader her at the At Work program and I am finally understanding the simply filling program. Keep the great emails coming and keep up the great work Danica. You are truly an inspiration to me!!

    Congrats on the loss! I’ve lost 62 and I’m FIVE AND A HALF(!) pounds from goal…this past year I’ve gained and lost the same 3 pounds! Pizza for me is NaanBread and I love a stinky goat cheese with arugula, mushrooms and peppers. Yours looks yummy!
