Hi all! How was your Monday back at it after the long weekend? I have to say my day was pretty great. It could be a great workday, my spot on eats, refreshing lunch time walk, fun gifts or one delicious low Smartpoint dinner at Outback celebrating our official 10th anniversary.
It doesn’t hurt that The Husband surprised me first thing with this 60th anniversary Mary’s Italian Kitchen Cookbook. It’s so cool….written by the brother and sister with recipes from Mary’s Pizza Shack.He then made us breakfast – Healthy Eggrolls and 1/2 an orange (3 sp). Love!I decided one weekday Starbucks was in order for my first day back post vacation.
Tall nonfat cappuccino with caramel drizzle on the foam (2 sp).My lunchtime salad was super easy to make and fun to eat. I loved all the fun crunchy bits all for 6 Smartpoints.Here is what’s in my bowl:
- Mixed greens
- Broccoli spaw
- Cucumber
- Cherry tomatoes
- Sweet pear
- 2 oz honey ham
- 1 Trader Joe’s cheddar stick
- 2 Thsp sunflower seeds
- 1 tap evoo with 1 Tbsp red wine vinegar plus a splash of balsamic
Late afternoon I snacked on a banana to keep my hunger in check for our anniversary dinner at Outback Steakhouse.
I wish I knew what a serving was of their bread and butter. I had two slices without butter as the bread is so good it does not need it. (5 sp)My first side was a house salad with tangy tomato on the side. 3 Smartpoints for the salad and 2 for 1/2 the dressing.My second side was grilled asparagus for 1 Smartpoints and wait for it…..WWFreestyle Zero Smartpoint steamed lobster.
