The BEST salad I ever ate…

Happy Sunday all!  I am so SAD our 3-day weekend is coming to an end but I have to say that I had one FANTASTIC weekend so I have no complaints.  The fun continued today when I met up with my sister for some running, lunch and shopping.

WOW!!!! I am SO IMPRESSED with us!  We set out to just do a little jog based on how we felt…we chatted away 8.5 MILES!!! Go US ~ we did take walking breaks every 4 minutes and walked the last a 2 miles! I think we were inspired by the River City Marathoners that were running past us….that and we had A LOT of chatting to catch up on.

Before I headed out to meet my sis, I tried my BEST to have a healthy, CORE type breakfast that was a good balance of carbs, protein and a little fat.

“Banana Chips” (1 pt)

Morning Star Veggie Sausage with Maple Flavor (2 pts).  I LOVE the Maple Flavored version ~ it’s sweet, savory and thyme flavored like. 

* I bet these would be AWESOME in a SAVORY WAFFLEWICH!

All together with an egg over-hard (2 pts).  I resisted dousing this with Hot Sauce because my stomach was a little funky from all of yesterday’s Bay Area Blogger Meet Up Indulgences.

After our run, we hit up my FAVORITE SALAD PLACE IN THE WHOLE WIDE WORLD….Yes, it’ requires all CAPITAL letters 😀

Jack’s Urban Eats!

I LOVE Jack’s because you can mix and match your salad ingredients ~ it’s all totally fresh and homemade!

My salad doesn’t look pretty but it might’ve been the BEST salad I’ve ever had.

In the mix (11 pt guesstimate – high):

* Mixed Greens

* Balsamic Vinaigrette

* Kidney/Garbanzo Beans

* Pepperoncini’s

* Honey-Glazed Walnuts

* Sun Dried Cranberries

* Tomatoes

* Mandarin Oranges

* Grilled Chicken

My Sis built hers too, but, added Spicy Buffalo Chicken with extra hot sauce ~ now you all know where I get my spicy cravings from 😀

Urban Fries ~ Topped with Blue Cheese & Spicy Chili Oil!  Their Blue Cheese tasted like ranch ~ so good!  I think I could pour their garlic chili oil on EVERYTHING & be 🙂 I had about 10 of them! (2 pts)

We did a little shopping after to walk off our lunch.  I was SO EXCITED when I checked out at Target and they gave me a FREE (plus a 5 cent credit) RE-USABLE bag for Earth Month!!! Love TARGET!  Go get yours while supplies last they are cute and HUGE!

Dinner tonight was super fast and exactly what The Husband asked for.    He wanted little shells for his spaghetti.

I found these Barilla Whole Grain Shells so I didn’t have to use white pasta ~ score!

I combined it with some sautéed mushrooms, TJ’s Spicy Arabbiata Pasta Sauce, Mini Meatballs, parmesan and crushed red pepper flakes. (8 pts)

I couldn’t resist this Organic Cheddar & Roasted Garlic bread when I was at Trader Joe’s.  I had a small slice for 1 pt.

Swiss chard! I think I had like 10 servings of fruits/veggies today 😀

Fast, easy and perfect when you don’t wanna really cook ~ I can’t wait for leftovers!

    Awesome job at the 8.5miles! That salad place sounds awesome – I hate when each additional topping is extra money, so awesome that you choose six.

    GOOD JOB on the 8.5 miles! woo hooo!!!!! omg, your pasta looks so good…I think that is what I need to make for dinner! I love that feeling of being excited for leftovers hehe.

    Great job on your run! I also ran into the River City Runners this morning – I had to tell like 3 different photographers to please not take my picture because I wasn’t part of the race – I finally got off the main trail and ran on the upper part so that I wasn’t in the middle of all the hub-bub!
    And I’ve gotta try Jack’s! I think I’m going to take Tyler there when he’s here in May!

    OH! Your salad looks YUMMY! I want a re-usable Target bag! So funny that I never think to bring in my bags when i go there! Weird! Grocery shopping YES, but Target, walmart, and drug stores no…I need to get more GREEN!

    PS.. I had a FEELING GOOD day today…whoohoo! 🙂

    I LOVE when you can find a place that makes a killer salad. It’s hard to find a restaurant the meets my salad expectations but when I find one, I am practically living there! 🙂

    Oh my goodness, that salad looks so stinkin’ good. + I love whole wheat pasta ingredients lists like that! Doesn’t it make you feel awesome while inhaling it? haha, ah, the big joys in such small, simple ingredients lists.
