Happy Friday Eve all! Thanks for all the great comments on my Harvest Grain Salad. It is a salad that we make all the time so I figured it was time to finally put it in my Recipe “Book”. It’s so fun knowing that you all make it over and over again too!
Yesterday morning I was up bright and early because I needed to take Scooter to visit all his friends at the Dealership.
On my way over, I stopped by Starbuck’s for a Grande FF Decaf Latte with Caramel Drizzle on top. (3 points+). I COMPLETELY FELL IN-LOVE with the fact that they have Valentine’s Day LOVE Cups!!!
How fun is that?! Totally a reason to justify buying Starbuck’s more often this month LOL.
By the time I got into work, I was STARVING and couldn’t wait to dig into the last two Taco Egg Muffins. (4 points+)
Since I knew my day would be busy, I made sure I packed up a delicious lunch that I couldn’t wait to dig into. The Husband helped me cut up the chicken for my BBQ Chicken Salad ~ he is totally professional!!!
Smoky, slight sweet, slightly spicy, crunchy with a lot of fun chewing power! In the mix:
- Organic mixed greens, red cabbage, carrots & cherry tomatoes
- 2 Tbsp Trader Joe’s Fire Roasted Corn (1 points+)
- 2 Tbsp pickled jalapenos!
- 4 oz BBQ chicken breast (4 points+)
- 1 Tbsp “fried onions” & 1 Tbsp tortilla strips (2 points+)
- 2 Tbsp Trader Joe’s Low-Fat Spicy Peanut Vinaigrette (2 points+)
I rounded out my delicious salad with a big bowl of berries……
And a Cabot Cheese Square. For those wondering about these, I buy them in the BIG BAG at Sam’s Club ~ they are 1/2 pepper jack & 1/2 sharp ~ both flavors are 1 points+ each.
At the beginning of each week, I “stock” up the fruit pile on my desk just for days like yesterday. It gives me something to grab/go when I want to devour the candy dish and it’s gives me something I can take to meetings when I am working late.
Yesterday…..I snacked on these two cuties to tied me over.
On my way home, The Husband and I were debating what sounded good for dinner. He mentioned heading out to Monsoon and we both were like ~ ohhhhh that sounds so good!
I actually dreamt about this dinner all the way home……
I was so excited……
I forgot my camera…..
All of that doesn’t matter though because……..
I went to a Burger place and made my dinner healthy!!!
Oh and I had my phone…it’s not the same but it works
Turkey Burger with Pepper Jack Cheese & Mushrooms…..(7 points+)
Then, I tossed the bun and used the toppings bar to make a burger salad!
* 2 types of lettuce
* Tomato slices
* Jalapenos
* Pickled onions
* AVOCADO! (3 points+)
I checked out the points+ for “fried” onion rings BEFORE I ate any and decided it was worth “splurging” on 4 of them to make “croutons” on my salad for 7 points+.
I gave the rest to The Husband BEFORE I ate any so I couldn’t change my mind.
SUCCESS! Dinner was so amazingly delicious, I am re-creating it this next week complete with the 4 points+ Beer Battered Onion Rings I found at Trader Joe’s!
I am really behind on all your emails, comments, etc. this week, but, I am hoping to catch up with you all this weekend. I just wanted to let you all know I didn’t forget about you!
On that note, I am off to get ready for another fun filled day!

Loved the Harvest Grain Salad yesterday. We made it for dinner and added left over turkey Italian sausage for additional protein. Filling, crunchy, chewy delishousness.
