Happy Easter and Happy Spring all! Our weather this weekend has been amazing and I am so glad Spring is officially here. You will see in this weeks menu, we are having “Salad Week” – greens, noodles and bean salads to keep it fun while embracing the season. We have a few non salady meals planned as well so maybe I should call it the mostly salad week lol.
To celebrate Easter, my mom in law gave me the cutest salt & pepper shakers along with this mini yoyo. I love them both.We headed out early this morning to the Alameda Antique Fair grabbing Tall Nonfat Cappuccinos with caramel on top for the drive (2 sp).
At the fair, we split a bacon, ham & egg burrito (my half was on the right) – 4 sp.
On our way back into town, we stopped at the Farmers Market. I picked up berries, Swiss chard, kale and The Husband grabbed a big grapefruit.
We had Habit Burger for lunch. I had the grilled BBQ chicken salad with ranch on the side. (4 Sp)Plus I shared the green beans on the right (4 sp for my share).
We opened our Easter bags when we got home and I had 5 Jelly Beans (3 sp) before I gave The Husband all my candy.
I also whipped up a batch of Banana Berry Muffins for this week and had one for snack (4 sp). This time I used all fresh blueberries but I have to say, I kinda like the frozen mixed berries better.For dinner, we kicked off Salad week with these 3 Smartpoint Taco salads.
