The Summer Challenge & My Simply Filling Menu

Happy Sunday all!  This past week flew by with work and the long weekend in which I stayed off the computer and spent all my time outside, relaxing, catching up on shows and life.  The best part though is that I finally got back into the kitchen!  I have been dreaming about Zucchini Bread for the past two months ~ I am not sure why other than it’s Zucchini Season, maybe?…

This weekend I finally satisfied my craving for Zucchini Bread by creating a new version of my Banana Nut Zucchini Muffins.  Hands down this is the best recipe I’ve made for anything with baked zucchini to date.  I still couldn’t convince The Husband that I used green bananas or that they were not made with squash, but, he did eat a few ~ Progress!  That’s ok, I shared the rest with everyone at my Weight Watchers meeting today so I wasn’t tempted to eat 60 mini muffins myself!

I will be sharing the recipe for these tasty mini muffins this week.  Somehow this is the only picture I managed to take….I guess I couldn’t wait to dive in.

This week my leader presented us all with The Summer Challenge and I have to say I totally LOVE the idea.  It is really simple and guaranteed to motivate helping you move towards reaching your goals this summer.

She put together a 3 month calendar for us (that we can fold in 3 to bring with our weigh in books).  The right side includes all the healthy routines we have been working on each month so far.

Then, she asked us to write an achievable goal each month.  Each week, we mark our weigh in on the form and each month you make notes on how you did towards Fun!

After weighing and losing .4 lbs., I grabbed some coffee and a bunch of watermelon wedges to snack on.

After the meeting we hit up Starbuck’s where I had a grande Iced Nonfat Latte with a hard boiled egg to finish off breakfast. (SF) – 4 points+

We spent all afternoon racking up steps walking around the Alameda Antique Fair. 

Flex made sure to let me know I was doing good things today with all that walking! Open-mouthed smile

We stopped for lunch at one of the local vendors who served Grilled Organic Teriyaki Chicken Bowls with brown rice.

The food vendors are probably one of my favorite things about the faire because you can get just about any type of food.

This afternoon I finished prepping for the week by cutting up a watermelon, cantaloupe and mango (all of which I snacked on while doing) and preparing one delicious dinner.

It is so easy to make ~ whip up a chunky turkey & veggie packed spaghetti sauce, add pasta, top with cheese and bake for about 15-20 minutes until the cheese is melted and all bubbly.

The best part is that it makes enough to have leftovers for dinner tomorrow.  For those wanting the recipe, you can find it here.

I am planning on making up some Simply Filling Ice Cream for dessert.

STATS:

  • Daily points: 21 points+, 0 WPA used, 49 WPA remaining
  • Simply Filing: Today was 100% Simply Filling! 0 WPA used, 49 WPA remaining

I am off to go exceed 15,000 steps now!

    • Leftover Baked Cheesy Turkey Ziti, Salad
    • Fresh Tomato, Basil Flat Out Pizza, caprese salad
    • Bacon, Maple Turkey Burgers with Zucchini Fries
    • Individual 7-Layer Dip & chips!
    • Grilled Shrimp Salads
    • Lunches will be Chipotle Chicken Salads or Turkey Meatloaf Muffins w Veggies & Dip

QUESTION OF THE DAY:

What is your summer challenge?  Pick at goal from now until the end of September, then, break it down into 3 months with a goal each month to achieve it.

    YEAH! My favorite Weekly Menu 🙂 Now if I could only put one together and stick to it! I’m trying to put together easy, quick WW friendly dishes I can make when I come crawlin in the house after a long day at the office, and a long drive home on I-95 🙁 I’m gonna try your summer challenge, and maybe that is where I put my eating/cooking at home? I printed off a few of your recipes for a good start!

    I am new to SF and found some of the info available to be quite confusing. I found your blog by another poster from the WW and Us FB page. This has given me the courage to try SF and made it so much easier to understand. Thanks so much. Have already referred you to another person and will probably be doing that often.

    I MISS My WW Meeting and Christine!! Wish I could particpate in the challenge. Next summer. Please Christine and the crew I say! I will come in and visit them this month or next for sure. 4.5 months pregnant and doing well! We’re having a boy! I’m due in December. I plan on being at WW first thing New Years…December 29th for Christine’s meeting!! Take care and ROCK the challenge! I’ll celebrate your victories–living vicariously through you!

    Looking forward to your zucchini muffin recipe.
    My goal this summer is to work out 4x a week CONSISTENTLY! Working out consistently always leads me to eating better.
    Step 1: Work out once a week
    Step 2: Work out 2-3 times a week
    Step 3: Work out 4x a week and stick with it
