Hi all! Yesterday I checked off my C25K 2.1 workout along with another Jillian Michael’s Body Revolution workout. I have such a love hate with that workout but I always finish feeling accomplished and good about myself.
It was a fun day that included going with my friend wine tasting then taking our other friend to lunch at R&D Kitchen before doing a 3 mile hike through the vineyards.This morning, I was up early to take a long hike with my friend. We started out with a 2 mile loop around this lagoon.
Then did the Tower Challenge hiking to the tower at the top of the hill between 2 cities near us. You go from 254 feet to 874 feet in elevation all uphill for a little over 2.3 miles then back down.
My pictures do not do the height justice. My Fit Bit says we climbed 80 floors and hiked 6 miles!
Before starting my day, I had 2 scrambled eggs, 2 pieces Trader Joe’s Peppered Turkey Bacon, 1/2 a red banana and a handful of blueberries for 2 sp.
Surprisingly, I wasn’t starving post hike. Lunch was the last serving of my Turkey & Black Bean Enchilada Skillet served over lettuce and topped with 0% Greek Yogurt, cilantro and tomatoes.
My entire bowl was only 3 Smartpoints.Dinner was a new Cooking Light recipe for Spicy Beef Noodle Soup. I pretty much followed the recipe using half the oil, no coriander and Harissa for chili paste. I’d definitely tone down the chili to 1-2 Tbsp as 1/4 cup is hot. I could handle it but it made The Husband sweat lol. It totally warms you up from the inside out – perfect on a cold day.
I served it up with Hoisin to add a sweet coolness. I love the depth of flavor in the broth – it’s rich with garlic, ginger, onion, beef and chilies – similar to Pho.
I added up the ingredients for my bowl with 1 cup of noodles and very little beef for 10 SP.15 Daily WWFreestyle Smartpoints, 20K steps
