The weirdest salad I ever ate…

Hi all! I kicked off another successful day with Jillian Michael’s Body Revolution workout. I actually missed her workout but that maybe because it was better than the treadmill today lol.

Since I knew we had a team lunch out, I kept my breakfast to zero points.

2 scrambled eggs with 1/2 a banana, blueberries and blackberries.Mid morning I grabbed a banana and Jarlsberg Mini (2 sp) to keep me from devouring all the chips at lunch.So, how did that work for me?? I did well at first breaking and dipping my chip pieces. It took over 45 minutes for our lunch to come out so….counting 8 Smartpoints. Luckily I shared this with 4 other coworkers.On the menu, my salad sounded awesome! But, the reality…

Ensalada Norteña
Colorful mixture of green beans, corn, whole black beans, tomatoes, onion, avocado, bell peppers and a few peanuts tossed together on a bed of Romaine lettuce and red cabbage.
Served with cilantro dressing on the side and shrimp

It could’ve been awesome if it was fresh….it was layered with canned green beans, canned corn, canned black beans, big chunks of raw onion…..the peanuts were odd but perhaps the best thing on my plate.

Maybe I am spoiled but I just found this salad to be so weird.

I counted 8 Smartpoints for my avocado, peanuts and the bit of dressing I used.I whipped up a quick dinner for us based on everything The Husband said sounded good. Truth be told he was going to cook but talked me into it lol.

    When I was first introduced to Nicoise Salad, I thought it was the weirdest thing ever – tuna, anchovies, potatoes, green beans, yellow beans, hard boiled eggs, olives. I know it’s a classic, but I just found it off-putting.
