Happy Monday all! I took advantage of NOT being able to sleep and finally gave up at sleeping at 5 am to get in a 5K (3.1 mile) run. I forgot how much I LOVE running in the morning ~ it totally wakes you up and starts your day off right. I felt so fast and like I haven’t missed a beat since our HALF!
By the time I got to work, I was STARVING so I whipped up a Quick Banana SUNDAE!
1 small banana cut into “banana chips”
5 large strawberries slices
1 container TJ’s Organic LF Vanilla Yogurt
1 heaping Tbsp Udi’s Banaberry granola
I added a hard boiled egg white for a little protein boost since this yogurt only has 4 g of protein. All together my 4 point breakfast kept me going for 3 hours.
Mid Morning, I had the MOST incredible snack ever!! 6 Black Pepper & Olive Oil Triscuits topped with 2 Tbsp Alouette Savory Vegetable Spreadable Cheese (4 pts). I broke into the 3 Alouette Cheese Pack I bought to serve up with some veggies and crackers for Easter. I couldn’t resist. The Stats are not bad, very similar to Laughing Cow ~ You can check them out HERE, but, I will be sure to snap pictures in my next review..
Lunch was another FUN combo. As I was randomly cutting up my pear, I decided it would be good INSIDE of my sandwich too!
2 slices Orowheat Light Whole Wheat Bread
1.5 oz each Honey Ham & Turkey
1 slice TJs low fat Muenster Cheese
1 Tbsp TJ’s Spicy Hummus
Spinach & PEAR!
I LOVED the sweet, spicy, crunchy combo ~ it was seriously like a party in my mouth :D I am sure my co-workers all thought I was a little cooky, but, I don’t care ~ it was tasty! Try it, you’ll like it! (6 pts)
Plus the rest of my pear on the side (1 pt).
The Easter Bunny stopped by my desk early and left an egg. I’ve never really understood how bunnies leave eggs, but, I am totally not going to complain when they leave DOVE chocolate!
I saved the “beans” and had the Dove Dark Chocolate. I really think they need to have cool Easter messages in the chocolates too 🙂
My afternoon snack was recommended by Sydney! I picked up these mini Lite Kettle Korn Snack Bags at Trader Joe’s.
I LOVE that they have a LITE Kettle Korn that is made with REAL ingredients ~ nothing artificial, just less of the “good” stuff.
2 points for the ENTIRE bag and it’s fully loaded to the top. NO empty air space like chip bags.
They come as a pack of 6 for $2.99 ~ not too bad for built in portion control.
The bags are HUGE and completely delicious. It honestly tastes just like the Kettle Korn you get made at the fair ~ salty, sweet, crunchy and just plain GOOD!
I also received a FUN Package today ~ MORE POM “Soldiers” from the people at POM Wonderful (Thanks!!!). I cannot wait to whip up some more POM recipes like the POM Chicken with Walnuts I made last time….Maybe I should repeat that ~ it was delicious!
I had planned on making Shish Kabobs for dinner tonight, but, at the last minute, I wised up! Why spend a million years threading veggies, when, I can dump them all in my grill basket and go. I seasoned them with some TJ’s Island Soyaki, crush red pepper flakes and freshly ground black pepper.
I did put the chicken on skewers and grilled it up next to the veggies.
While I was grilling The Husband busted out his “boots” and mowed our “super thick” 1/2 inch grass (he’s a little OCD about keeping it short). I told you all ~ he just LOVES to wear those boots (even with his shorts) 😀 He’s so cute!
I measured out 2 oz of grilled Soyaki Chicken (2 pts).
Plus a bunch of veggies. I forgot to drop the sweet potatoes in water so they were totally crunchy like carrots (oops) (1 pt). (Surprise ~ The Husband thought they were carrots the whole time (and liked them!) otherwise he wouldn’t have eaten them at all! :D) Sneaky me 😉
1/2 c TJ’s Organic Frozen Brown Rice (2 pts).
Delicious and I felt so healthy eating it! 🙂

I may have missed this but at what point should you drop your sweet potatoes in water so that they don’t get crunchy? I love putting veggies in the grill basket but never thought of adding sweet potatoes. I can’t wait to try them next time.

Yum, kettle corn is the BEST snack ever! Love that stuff. And your grilled veggies look amazing, especially with brown rice. So healthy too. 🙂

I think there are two ways you could go about it. If you cut your sweet potatoes smaller, they will cook evenly with the other potatoes. I cut mine super thick so they didn’t cook right.
I would drop them in boiling water for about 3-4 minutes then rinse in cold water to stop the cooking process. You want them to be crisp still, but, slightly tender. Add them to your raw veggies, season and grill. It just helps to get the cooking process started, but, not cook them all the way.
Grilled sweet potatoes are awesome. You could always slice them in rounds, brush them with olive oil, a little sea salt and grill for 4-5 minutes per side or until they are cooked through with great grill lines.

Woohooo ~ Congrats on completing your HALF!!! I agree – it always feels amazing to accomplish something that you never really thought you could do.
I told my sister she has to pick the next race ~ she could go small (5K) or big – the choice is hers. I think we might actually do a 10K, a half and then maybe a mud run – but nothing is set in stone.

love your banana sundae – i never thought about adding a hard-boiled eggwhite to yogurt, although i do snack of plain hard-boiled whites throughout the day.
i also have a grill basket that i can’t wait to start using, i think its easier because not only do u not have to thread the veggies individually, but also they don’t get stuck to the grill and get all gross! thanks again for all the annie’s stuff, i’m hooked on those bunnies!

i need to get those kettle corn bags from TJ’s. i am a girl that needs portion control when it comes to kettle corn. have you ever had REAL kettle corn from an orchard or something? i’ve had it once. i bought the the “big” bag. that was a big mistake. matthew and i ate the whole thing in 2 days.
