Happy Long Weekend all! I hope you all are enjoying the last bits of summer. We kicked off our weekend on Saturday at Weight Watchers where I lost 1.8 lbs! I am super happy with that result as I really tried to get back last week on track after what felt like a summer of kinda working the program. It wasn’t a perfect week but I definitely made great strides in the right direction of healthy eats, dinners in and exercise.
Today we were up early to head to the Alameda Antique Fair for The Husband to find his treasures while I get in my steps listening to my Audible books. I finished The Weekenders and now I am moving on to The Stranger. I really like both these authors.
We stopped at Starbucks before hitting the road. Tall Nonfat Cappuccino with caramel on top of the foam (2 sp).At the Fair, we shared a Bacon, Egg & Pico de Gallo breakfast burrito (4 sp).
Post fair, we stopped at Buckhorn Grill on our way back from the city. I had the Yik Yak Salad with Chicken and the dressing on the side. I do not eat the tortilla. (5 sp)
Funny fact – someone walked by me with french fries while I was waiting to order and I thought, ohhh, I am so getting fries with my salad. Then, I did not realize I forgot to order them until I sat down at our table. Unplanned Success lol.My WW leader asked me to help her create a few recipes with PB2…I am always up for new recipe challenges.
My first attempt today was a Peanut Butter Banana Cookie. On this batch, I think I need more sugar (actually I used none on this thinking bananas might be enough)….once, I get it right, I’ll share the recipe.1 Cookie for 1 Smartpoint, a fig and a cup of Starbucks Graham Cracker coffee.
I did not feel like cooking so I went the easy route. I grilled Butterball Turkey Burgers (5 sp) and served them with a simple side salad topped with 1 Tbsp Trader Joe’s Spicy Peanut Vinaigrette (2 sp).

- BBQ Ribs, Corn, Watermelon
- Grilled Shrimp Scampi Packets with grilled zucchini and grilled bread
- Chicken Paillard Pizzette with Summer Pesto
- Turkey & Spinach Stuffed Manicotti, salad
- I also want to make these Spicy Shrimp Noodles or Pita Pizzas.
I am planning on making Ham & Cheese Quiche Cups for breakfast and these chicken sesame noodles for lunches.
