Happy Sunday all! We have had an awesome weekend that actually FELT like a weekend. You know where you get in a little bit of everything ~ sleeping in, cleaning, relaxing, catching up on your shows, finishing a book, having a little fun heading out of town, but, more importantly, actually feeling like you have had TWO days off!
I LOVE weekends like that, don’t you? I think the BEST part for me aside from feeling super accomplished, is I managed to stick to my September goals even while being a little lazy “not cooking” and dining out a few times ~ success!
SATURDAY
I never realized how hard it can be sometimes to get that 1/2 cup of veggies in to start your day when you are NOT having eggs.
I could’ve done a green smoothie, but, there is something more satisfying for me in the morning about “crunchy” away versus slurping away. Rounded out with 2 slices of Trader Joe’s 97% Fat Free Turkey Bacon (1 pt)
Mid morning I really wanted to snack away on something crunchy ~ so I cut up an entire bell pepper with a TJ’s lite string cheese (1 pt)
LUNCH!!!
MMMM, I finally tasted the Chipotle Chicken & Chickpea Soup I made the night before and I have to say it was absolutely delicious with so many layers of flavor. I can’t wait to have it again (7 pts)
More Crunch ~ Celery stuffed with homemade crunchy almond butter (4 points because I got a little heavy handed with my almond butter) 🙂
Some days you just really know you shouldn’t cook because it might not turn out good….ummm, that was me on Saturday so we headed out for dinner.
I LOVE Chipotle Chicken Salads! I know that one day I am going to host a MAKE YOUR OWN CHIPOTLE party using this recipe for their chicken marinade online!
10 points and worth every HEAPING point. I <3 Guacamole!
The day ended with 2 unpictured fudgesicles.
SUNDAY
We were up early to head to the Sacramento Antique Fair. Before heading out the door, I whipped up a quick cheesy, mushroom scramble (2 pts)
Pit Stop ~ Grande Fat Free, Decaf Iced Latte (2 pts)
Plus some spicy peanuts (2 pts). I am so addicted to these right now…I was a little OCD and counted out 20 as I ate them LOL.
The REAL reason The Husband got me to go to the antique fair ~ the promise of PITA PIT! As you all saw before, I can so easily be bribed with good, healthy food :D I think I probably need to try EVERYTHING on their menu eventually 😉
I really pondered getting a pita, but, realized it wouldn’t fit with my September goals so I had my wrap ~ FORK STYLE!
* Romaine
* Tomatoes
* Cucumbers
* Bell Peppers & Onions
* Pepperoncini’s
* Cheddar Cheese
* Olives
* Buffalo Chicken with peppers, mushrooms, onions & buffalo sauce
* Guacamole!
10 points of amazingness! I actually didn’t miss the pita either.
We actually drove all the way down to Benicia on our way back to check out a few more stores. I love walking downtown and seeing the ocean right there.
More car snacks (cherry tomatoes).
Turkey Bacon ~ totally a normal car snack (1 pt)
We met some friends at Monsoon Burger for dinner. I decided to get my California Avocado Burger without a bun so I’d have room for my “2 cups of veggies”. The only problem was having a side salad wasn’t an option.
So, what’s a girl to do???
I totally use the condiment bar to make up a Burger Topping Salad ~ believe it or not, it totally hit the spot! (9 pts)
* Romaine leaves
* Tomato slices
* Olives (ok, who puts these on their burger?! It worked for me though lol)
* Pickled onions
* 4 oz Burger topped with pepperjack and AVOCADO!
You know what is totally crazy is that I don’t feel like I was deprived at all ~ I completely enjoyed my meal and felt so empowered giving The Husband all my fries too :D
I AM SO IN “THE ZONE” AND FOCUSED ON MY GOALS !!!
I am off to drool over the latest Fall Baking Cookbook that showed up in the mail this past week. The fantastic peeps at Betty Crocker sent me a copy for voting on which cover I thought they should use.
I am so excited that Bakerella won the cover and I cannot wait to make like EVERYTHING in here……just, not until October 😉
