Happy Sunday all! Just when I thought last week was incredibly busy, this weekend came along! We had such a great time visiting with family and friends ~ I LOVE the holidays just for that reason alone.
Before I start recapping this weekend, I just had to tell you all THANK YOU SO MUCH for all your support and congrats today on my 1.2 LB WEIGHT LOSS THIS WEEK!! I honestly just LOVE the Weight Watcher Support we have on Twitter, Facebook and Friends for Weight Loss. You all rock and inspire me EVERY DAY ~ so thanks for that! It definitely helped me survive 3 holiday parties and a cookie party, yet, still LOSE weight
SATURDAY
I decided the BEST way to start my day and be “full” was to have a little protein and a little fiber.
Enter My Quick 6 points+ eggwich.
2 slices of TJ’s Fat Free Multi-Grain Bread (my favorite bread in the world!) (3 PP)
2 tsp Whipped Butter (1 PP)
1 egg “fried” with nonstick spray, sea salt and black pepper (2 PP)
Along with 2 ZERO point Cuties! I LOVE that these are free ~ I could probably eat them all day long.
After breakfast, I got to work on a few last minute gift ideas. I have 8 teenage nieces and nephews that I never know what to buy for. I have pretty much come to the conclusion that they dig CASH & GIFT CARDS the most. But, I hate giving just an envelope….it seems so impersonal.
I added my little touch by creating 2 types of individual cakes they can cook in a mug. Recipes and steps coming up tomorrow.
Honey Crumb Cake ~ yes, this is the one I messed up the wording when I announced it to my ENTIRE family that I made the nieces/nephews Cum Cakes ~ OMG ~ so embarrassing!
Triple Chocolate Cake
I tucked the gift cards in the cups and put the “cakes” with directions on top.
The other gift I quickly whipped up to go along with my brothers & sisters gifts involved jars of goodness!
Oatmeal Cinnamon Pecan waffle & pancake mixes ~ recipe coming up tomorrow too
We finished all our wrapping and “gift making” in the AM before heading out the door and stopping at Starbuck’s along the way.
Venti Iced Dirty Latte ~ Fat Free, Decaf, Nonfat Latte with 1 pump Mocha (4 points+)
I also stole some of The Husband’s Chex Mix I made him as we drove ~ about 1/2 cup (one handful) – 3 points+
My mom did an AWESOME job at having healthy snacks out for everyone. I filled my plate with veggies and fruit. Then, decided I HAD to have a little of her AMAZING homemade cheese log on a ritz and a cheese quesadilla square (5 points+ estimate for my nibbles).
Have I ever told you all my Mom rocks?! Well, she does….She knows I’ve been trying to work the Points+ program so she bought some things especially for me without telling me until I arrived LOVE her!
We ALWAYS have a “not so traditional” Christmas dinner at my Mom’s that includes Homemade Chimi Changas. She fried everyone else’s in oil, but, used La Tortilla Factory Whole Wheat Tortillas for mine and “fried” it in nonstick spray.
I piled on all my toppings including 1/3 cup of Weight Watchers Cheese.
Lettuce, homemade guacamole & salsa!
Then, I eat it all like one huge taco salad. The BEST part is all the “toppers” make one enough. (12 points+) for my one FULLY LOADED BEEF CHIMI CHANGA. If you all want the recipe (she makes the meat in the crockpot all day) just leave a comment below and let me know.
My clowny family ~ Niece, The Husband and Dad! LOVE!
I am not sure if you all have realized it or not, but, The Husband is a HUGE Cal Bears Fan. My parents got him “Ozzie ~ The Cal Bears Bear”…He now officially sleeps with us – so funny! LOL.
SUNDAY
I started my day off with a little motivation from my Weight Watcher Meeting. Oh and losing weight when I usually plan to just maintain over the holidays was a nice surprise!
I really WANTED to make breakfast this morning, but, somehow never did. Breakfast became our stop at Starbuck’s on the way out of town.
Venti Iced Dirty Latte ~ Fat Free, Decaf, Nonfat Latte with 1 pump Mocha (4 points+)
I totally decided it was WORTH IT to eat at my FAVORITE Salad place in Sacramento, Jack’s Urban Eats over snacking at our next holiday part.
I mean, seriously, who doesn’t LOVE HUGE SALADS over cookies and cake
I wish you all could see everything in the bowl….
Mixed Organic Greens
Cherry Tomatoes
Pepperoncini’s
Mandarin Oranges
Dried Cranberries
Candied Walnuts
2 Buffalo Chicken Strips
Tossed with house made Balsamic Dressing.
Crunchy, spicy, sweet, chewy……DELICIOUS! (15 points+ and honestly worth everyone!)
I managed to do well at passing up on all the holiday party treats because my belly and mouth were happy. I did snack on a couple of carrots and a piece of cheese over a 4 hour period.
Dinner was fast and something The Husband picked out at Costco this week.
8 points+ for 1 cup or 1/7th of the pan isn’t too shabby.
It doesn’t look pretty and it’s a pretty small serving, but, it hit the spot for something fast that I didn’t have to “cook”.
I actually have good intentions to COOK what I didn’t cook last week
HERE IS THE MENU FOR THIS WEEK:
* CEiMB: Baked Beans with Ham with a Green Apple Cabbage Salad
* Recipe Renovation ~ Lasagna Belmont
* Chicken Tetrazzini Casserole from the latest Clean Eating Magazine
* CEiMB ~ Turkey Taco Salad with Spicy Tomato Dressing
* BLTA’s
* Cashew Coconut Curry Crunchy Chicken Finger Salad
Then, I have a few other things on the list that I may swap out like my Fiesta Enchilada Skillet and the Weight Watchers Breakfast Texas Casserole.
THE END! Congrats if you are still reading!

Danica!! Great job losing this week.. The PP Plan is really something very liveable (grammar???) LOL. Anyway, I tried the Ropa Beef this past week and it was a huge hit with hubby and myself – the Winter Squash Soup, also and the Chicken Parmesan – ROCKS!!! All on WW site in recipes section. Keep up the awesome job! Merry Christmas!!!
I’ll take that recipe for the chimichangas!! We’re huge mexican food fans over here!!
Congratulations on the weight loss! That’s fabulous! I lost 4 lbs on the new program the first week, and the 2nd week i had to swap my meeting because I couldn’t make it on Saturday, but I’m going tonight so I am crossing my fingers!! Would you mind sharing your mom’s crockpot chimi changa recipe? I am looking for really good crockpot recipes so I can finally start using mine! lol BTW thank you so much for your blog, I check it every morning and I really feel like it keeps me on track! I love seeing all the yummy creations you eat every day 🙂 Merry Christmas and Happy New Year!
Congrats on the loss!! This is week #1 of faithfully journaling. I’m doing a combo of WW PP while following the rules of the Insulin Resistance diet. Focusing on protein and fiber and less on carbs has been wonderful. I honestly haven’t been hungry and I find that my cravings for carbs has diminished slightly. Can you believe there have been days where I’ve been full before my plate was empty? Here’s hoping for a loss on Thursday. Thanks for your website. It has some great ideas.
Congrats on your loss Danica! I, however, was not so fortunate, and *gained* the 1.6 I lost last week. Bummer. I thought I had done pretty well too, considering the parties I went to. I, for the first time, used almost all my “weekly” points+ w/ all the party stuff and now it’s making me think maybe I can’t really do that *&* lose. 🙁
So, back to trying to stick mostly to my daily points w/o real splurges. Crud.
Congratulations on your continued weight loss. Your mom sounds awesome. You are very lucky to have family that support you. I really look forward to reading your blob everyday. Keep up the great job.
First of all, I want that buffalo chicken salad! I may have to make a version of that for my lunch this week!
Second of all . . . I lost -2.6 this week – woot! And guess what? I went out for pizza, had beer and wine last week – biggest part was I counted all my points and exercised.
Do you “eat” your exercise points?? I didn’t and don’t think I will, simply to give myself a cushion if I am underestimated my points for some reason.
Happy Monday!!
LOVE LOVE LOVE your new “Friends for Weightloss” site….HUGE FAN!!! Could you email me the recipe for your Mom’s chimi-changa meat?
Thanks and keep up the GREAT work!!!
🙂
Jessy
How sweet of your mom to help you out with plan appropriate foods! Love that.
I tried a new recipe called breakfast berry cornbread from the new WW pointplus cookbook. It is a winner! My daughter and I both loved it. I posted about today. Stop by and take a look!
Congrats on the wonderful weight loss! I too would love to have the recipe of your mothers chimi…… Thanks and love this site and the new site.
Congratulations on your loss Danica! That is so exciting. You are very lucky to have such a supportive family on your weight loss journey. All the meals you had this past weekend looked wonderful. I would love to have a copy of the FULLY LOADED BEEF CHIMI CHANGA.
I would love the recipe for your chimichangas. They look amazing!
I’m not trying out too many new recipes this week (except for baking). I have too much to do!
Way to go!! Any loss in December is AMAZING!! I would also love the chimichanga recipe!!
Way to go on the loss, Danica! I’m down another 0.8 which means I have to go down in my daily points. Not so terrible, I’ll just be eating more veggies & fruits!
Seriously cuties and satsuma tangerines have been my lifesaver. I could eat an entire box!
I would love the beef recipe. Thanks for all the hard work you do on the blog. Love it
I would love the recipe for your chimichangas. They look amazing! I’m not trying out too many new recipes this week (except for baking). I have too much to do!
Hi Carol,
Absolutely, I never really thought that my eggs were pretty 🙂 I will make sure I do a tutorial on how I do them. For now…..
My Egg whites ~ I add a dash of sea salt, black pepper and Tapatio Hot Sauce, then I cook them in a ramkin sprayed with nonstick spray in the microwave for 1 – 1:30 minutes.
My Egg white ~ I “fry” my egg in nonstick spray. I place the egg in the pan, break the yolk with my spatula, then, sprinkle with sea salt and black pepper. I cook it for about 1-2 minutes, then, flip and cook another minute.
Happy Holidays to you as well and thanks for reading!
Danica
HI Biz,
I am totally copying you if you recreate that Buffalo Chicken Salad ~ it’s seriously one of my favorite salads ever! Congrats on the loss! I LOVE that you enjoyed and lost on the program – that’s what it’s all about!
I do not “eat” my exercise points, but, I know others who do. I think it’s really an individual thing ~ some people have to to lose weight and others don’t. I try to focus on my body and if I am hungry on the days I exercise. I usually have plenty of WPA so I just count extra points against those.
Happy Holidays!
Danica
I would also love the chimi recipe! :o)
Would you mind sending the Chimichanga recipe. I just found your website and love getting all of your great idea’s. Thank you.
