What are you “HOOKED” on?

How cool is it that last year we were at the CASTLE that they visited on The Bachelor last night.  I LOVE Casitllo De Amorosa (Castle of LOVE) and there are seriously freaky under ground tunnels that you can get lost in/walk through like Vienna did.  It’s so beautiful and unique ~ if you ever come to Napa/St. Helena, you have to check it out.  Last nights show rocked, but, seriously, next week looks even better ~ I am SO HOOKED!

Speaking of being hooked on shows ~ Happy BIGGEST LOSER day all!  I seriously LOVE that show in case you hadn’t noticed :D  I cannot wait to see which team comes back.  I promise this is really the only TV I watch all week 😉 LOL

I started off today with a 2.21 mile run with NO back pain ~ fingers crossed it’s gone!  I LOVED watching all the Oscar nominations live while I ran.  It made my treadmill time fly by.

Breakfast was sorta random….a ZERO point egg white with sea salt and pepper for a little protein.  Did you know you can get 3 egg whites for only 1 pt?

I had a small banana for some fruit/fiber and two slices of TJ’s Rustic Sourdough bread with freshly ground almond butter.  Totally filling for 5 points.

Work was completely insane today, but, that can be a good thing when it makes the day fly by.  I snacked on a 1 pt LF Colby Cheese mid morning.

The Husband called me up and said that it’s TUESDAY which he thought was all you can eat pizza day at Round Table.  I didn’t have the heart to tell him they have it EVERY day especially because I LOVE days when he wants to go to lunch with.

I took FULL advantage of their salad bar and loaded up with oil & vinegar on the side.

Then, I impressed myself by taking the two smallest pieces of pizza I could find ~ 1 veggie, 1 ham/pineapple.

I couldn’t resist their dessert cinnamon roll strips ~ SO GOOD!

Tonight’s dinner was something I picked up for The Husband to make for us to have for dinner.  He has been sort of on a kick of wanting to cook for us more often so I completely want to encourage that 😀

Dinner goes together in minutes and will make you SMILE when someone else makes it for you~ all you need is a little squash, a little garlic mashed potatoes and a little Italian Style Turkey Meatloaf!

I typically avoid the premade meals at Trader Joe’s because the stats are insane.  However, I LOVE that they came out with a Spicy Turkey Meatloaf with great stats and REAL ingredients!

I am DIGGING that it is 3 points a serving ~ 1 point per ounce ~ AWESOME!

All you have to do to cook it is nuke it for 5 minutes (wierd) or heat it in the oven at 350 for 20 minutes.  It’s so easy even your KIDS or um, Husbands can make it!  MMMM…look at the big chunks for garlic in the sauce on top.

You could also create your own meatloaf by making this Healthified Italian Style Turkey Meatloaf ~ cook one and freeze one for later.  Then, simply unthaw and reheat the same way.

I really LOVED the the turkey meatloaf ~ it almost has a sausage flavor with the fennel seeds. I had a NICE SIZED 3 point slice!

Of course…..I always like extra sauciness.  Super SECRET ~ FYI ~ THE TJ’s Organic Ketchup is made by Annie’s (and it’s cheaper) 😀

I think I was punished for telling you all that because I had a total ketchup explosion.

YUM ~ I CANNOT wait to put this is a wrap with laughing cow and veggies tomorrow for lunch!

The two sides can be quickly made up while dinner cooks.  The first was Trader Joe’s Instant Garlic Mashed Potatoes.  These honestly taste like the real deal and you cannot even taste that they are instant. The Husband always polishes them off and requests them so that says something for how tasty they are.

To lighten up the mix-ins, I use Fat Free Milk and only 1 Tbsp Whipped Butter (approximately 3 pts a serving)

Probably the ONLY time you will see me eat something with stinky blue cheese ~ you can’t taste it but you can smell it in the seasoning pack 😉

Topped with coarsely ground sea salt and black pepper ~ 3 pts!  If you are feeling ambitious, you can easily make your own Garlic Mashed Potatoes too ~ just leave out the bacon and cheese (if you want)….the key is in the broth.

I used this beautiful organic zucchini to whip up a batch of Parmesan Zucchini.

Sometimes it’s fun to cut your veggies into different shapes….I usually use circles so tonight I went with sticks.  I think the sticks caramelize better…..1 pt!

All together with FIZZY Water from my Soda Stream!  I am pretty much addicted to that too 😀

I am so excited that I found my FAVORITE Christmas Mints in hearts for Valentine’s day ~ Who knew?!

It’s almost BIGGEST LOSER time ~ who are you rooting for to come back ~ yellow or blue?  I think I am voting for yellow, but, I could change my mind!

I should have one of my crockpot recipes up for you all by tomorrow ~ FUN!

    I always want to try TJs prepared meals. Some have OK stats and look delicious!! That meatloaf does look amazing 🙂 And you can’t beat meatloaf topped with ketchup. Awesome info about Annies & TJs – no idea!! And I love TJ’s so good to know! And yummm love those mints too! Just an awesome looking night, girl 🙂

    I am making turkey meatloaf tomorrow night. Such a comforting healthy meal.

    I just haven’t gotten into TBL this season…weird. I guess I’m just over it for some reason!

    WOW!! YUM!!!! Ok sooo tell me HOW you only eat two itty bitty pieces of pizza???? That salad looked awesome though!!! Dang I was ready to see the red team go…Iam not a fan of the red woman. Sad to see John go but proud of what he accomplished. I still root for pink team. Them & stephanie & the cousins on the gray team are my fave!!!

    I love Biggest Loser, too! Some people have negative feelings about it but I think it’s inspiring to watch them not only lose weight, but realize their full potential and break through painful barriers as well. 😀

    Well, I’m hooked on something that isn’t exactly healthy…. infact its pretty bad: chocolate covered cinnamon bears! :/ They are to die for, and I could eat the whole bag, so I don’t buy them often maybe once every few months.

    I’m also a fal of BL and Bachelor…. no fave teams this season for BL but I’m rooting for Gia or Tenley for his choice. Vienna and Allie are in it for all the wrong reasons!

    Crockpot recipe looks amazing, thanks for the how to! 🙂
