Happy Biggest Loser Day all! Thank you a million times for making my day all your nice comments about my first day and for sharing what you LOVE most about your jobs on my last post. It was actually really fun to read about all the different things you all do. It is like I got a little chance to know you all just a bit more.
I am sooooo tired tonight (not even watching the show) so tonight’s post is going to be FAST.
I knew EXACTLY what I wanted when I woke up this morning ~ a BIG muffin of coffee and a Thomas Cinnamon Raisin English Muffin topped with 1 Tbsp Natural Honey Peanut Butter.
Doughy, cinnamony, nutty, chewy and sweet (7 points+)
Plus more coffee to go in my “fall” Contigo Mug.
I am still a little shy about letting everyone at work know about my site so I snapped pictures of al my eats for they day as I packed them up.
I LOVE snacking on bananas because they are 0 points+ and do a great job keeping me full until lunchtime. I did sorta wish I could’ve put more peanut butter on it though
Lunch was a delicious double stacked 6 points+ sandwich.
2 slices Trader Joe’s FF Bread, 1 oz each turkey & ham, 1 slice Jarlsburg Lite Swiss & Trader Joe’s Sweet & Hot Mustard.
Instead of chips, I had veggie tray veggies dipped in ranch (3 points+)
All packed up in my super cool new lunch bag!
I have been starving yesterday on my drive home so I decided to pack an afternoon snack for my commute home. It definitely kept me from wanting to eat everything in the house as soon as I walked in.
Nectarine + String Cheese (1 points+)
Since I didn’t really create a menu for the week, we are just “winging it” based on what we have in the fridge and freezer.
Tonight we started off by sautéing 2 bell peppers and an onion in 1 tsp Olive Oil.
Then, The Husband picked the protein ~ these 3 points+ Roasted Red Pepper Chicken Sausages we picked up at Sam’s Club awhile back.
1/2 bag Ore Ida Frozen Hash Browns c”fried” up in 2 Tbsp Olive Oil.
Add the caramelized onions/peppers to the slightly browned hash browns and continue browning until the potatoes are golden.
Remove from the heat and add in the browned sausage and fresh tomato.
Makes 6 BIG servings ~ 5 points+ each!
The crispy potatoes totally absorbed the smokiness of the roasted red peppers and sweet onions/peppers.
We both totally LOVED it straight up…..
But, it was even better when topped with ketchup!
The Husband cracked me up ~ he was excited for leftovers, but, then, ate the other 5 servings LOL.
Q’s:
I want to know what you all would call it. It’s not really sausage & peppers and it’s not really hash (I just think hash sounds gross lol). So ~ what do you call the “recipe” we made for dinner?
I will catch up with you all later ~ I know I am behind on your emails, comments, etc. but, will be making my way through them all soon.

well…I’d call it delicious! lol I have some roasted red pepper chick sausages in the freezer and I know what I am doing with them now! Seriously though…I guess a Sausage and Potato Skillet would be accurate!
