What gift would you pick?

Happy Hump Day all!!!  I cannot believe it’s less than 2 days until the Foodbuzz Festival ~ seriously, I cannot wait to meet and see you all….Oh and The Husband said to tell you all he agrees 😉

But…….I think what you all may not be able to believe is that I am posting TWICE in one day and it’s a daily journal!  I know, I know, it’s a lot for me too….I missed it and you all too much.  I actually think there is something therapeutic about rambling on to you all each day about ummm, whatever!

So, here we gooooooo……Breakfast involved a little “Pumpkin Cheesecake” ~ the perfect start to any day.

Pumpkin Cheesecake Muffin

Thomas English Muffin

Laughing Cow

Homemade Healthy Pumpkin Butter

3 points of AMAZINNNNGGGNESS!

Plus a “lil’ protein power ~ Morning Star Soy Sausage (2 pts).

Morning Star Soy Sausage

Enjoyed next to our BEST DECORATED HALLOWEEN CUBE with a “Dirty Latte” (Grande nonfat decaf latte with 1 pump mocha) (2.5 pts).

You know, we totally did it for bragging rights and the trophy 😉

Halloween Trophy

My awesome friend invited me to lunch today at High Tech Burrito ~ I haven’t been here yet and I am seriously wondering why!

High Tech BurritoFast, fresh gourmet burritos

I LOVE places that have a “healthy options” menu that includes VEGAN eats….

Healthy Grill

That are focused on being green & composting…..

Compostable Cups

That serve Chips & Salsa!  The chips were just ok (they are bagged after all), but, their salsa is rockin’.

Stoneground Tortilla Chips & Salsa

I rarely go for the burrito since you all know I have a crazy fascination with tacos.

But, today, I just really wanted a BIG BURRITO….not any burrito ~  Mexican Asian Fusion burrito!

“HAWAIIAN TERIYAKI: ~ Teriyaki chicken or steak, green onions, garlic, carrots, cilantro lime rice, pico de gallo in a roma tortilla

Hawaiian Teriyaki Burrito

It is definitely more like a wrap than a burrito, but, it was awesome ~ you could taste the smoky, grilled flavor of their chicken (Like Chipotle) with hints of lime, garlic, teriyaki and a little “heat” (if you get the Nuclear salsa like me too!) 10 pt estimate

Mexican Asian Fusion

I pretty much inhaled every bite and it kept me full the rest of the day and through Body Sculpt!  The Husband was in charge of dinner tonight and he did not disappoint 😀

A little while back Foodbuzz sent us a little Buitoni LOVE as part of the tastemaker program.  I LOVE their fresh pasta line so when they asked if we wanted to try their frozen pastas, I was all over it.

Buitoni Frozen Meal Flavors

The Husband picked out their Braised Beef & Sausage Ravioli’s (such a guy selection, huh?)

Buitoni Braised Beef & Sausage

I like that their ingredient list contains REAL ingredients that even 3rd graders can pronounce.

Buitoni Frozen Meal Ingredients

The stats are a little freaky, but, seriously, I think their portions are off.  The box can easily serve 3-4 people unless it’s your norm to eat half a pack of frozen ravioli’s.

Buitoni Frozen Meal Nutrition FactsBuitoni what's in the box

Easy to make!

Buitoni Cooking Instructions

Simply drop the sauce packet in your water and bring it to a boil.

Buitoni Sauce

Add your ravioli’s and boil fro 5 minutes.

Buitoni Frozen Ravioli's

Drain and plate your ravioli’s

Buitoni Ravioli's

Add your sauce and “special effects” as The Husband calls them (parsley for color and parmesan just because lol).

Buitoni Ravioli's with Creamy Tomato Marinara

My portion (1/4 of the package ~ 7 ravioli’s), 6 points.

Buitoni Braised Beef Ravioli's with Creamy Marinara

I have to say that the ravioli’s are not bad ~ they are super sausage like in flavor.  The sauce is just ok ~ I think a straight up marinara would taste better.

Sausage Packed Ravioli's

Simple salads with Newman’s Light Lime Vinaigrette on the side. (2 pts)

Simple Salad

Since he was nice enough to cook dinner, I decided to reward him with a little cupcake love.  I used Martha Stewart’s Yellow Cupcake Recipe and topped it with a homemade chocolate frosting.

I definitely need to practice on my chocolate frosting a little because it thickened into the smooth, creamy, hardness of truffles after sitting for a bit 🙂

For what it’s worth, here is the breakdown of what is in the bowl

12 oz Scharffen Berger 70% Bitter Sweet Baking Chocolate, melted & cooled

1/2 cup butter

1/2 cup + 1 Tbsp Dagoba Cocoa Powder mixed with 1/2 cup + 1 Tbsp hot water

I started with 1/2 cup powdered sugar and kept adding more because it was too “dark/bitter”.  I think I ended up with about 2 cups.

Frost right away unless you want truffles….although, maybe that’s a great idea for Christmas 😉

QUESTION OF THE DAY ~ I NEED YOUR HELP!!!

One of the new things to this year’s FoodBuzz Festival is a Foodie Gift Exchange.  We are supposed to bring something that represents our town or our blogs.

What would be one gift you all would like to receive from me if you got my Gift at the exchange? I totally need ideas!!!

Night all!

Speaking of Pumpkin Cheesecake, have you tried the Trader Joes’ Pumpkin Cream cheese? It’s out of this world.

High Tech Burrito is my favorite burrito place ever!!! My family would go there every Friday night growing up – I miss it. If you ever go back – the Low Fat Chicken burrito (yes – that is the name) is amaaaazing. Whatever sauce they use on their chicken is so good. Highly recommend. They also have their nutrition info online if you’re interested 😉

I agree with the person above about Annie the Baker’s cookies. I’ve been tempted to order some. Or something seasonal/special sold only in your area. Or something you make – pumpkin butter perhaps? 😉

I agree with the previous suggestions of pumpkin butter or something Annie-related since that kind of reflects you.
