What is one meal you can eat all the time?

October 9, 2011 by DanicasDaily 19 Comments

Happy Sunday all!  Thank you for all your nice comments on the new Danica’s Daily and My Recipage.  It has been a lot of work (that I couldn’t have done without all the help I received).  I owe a BIG Thanks to Caroline at Just Like Magic for helping me to enter recipes too!  She really is one fantastic person who inspires me every day with her Weight Watchers success (she lost 73.8 lbs and reached goal last January!)

I can’t wait to share all the other things I have planned for the new Danica’s Daily…Slowly but surely, I am getting there and I will be sure to let you all know when I add something new.  At this rate…maybe by the time I am 40 LOL…..Kidding ~ soon, I hope!

This morning The Husband had me up bright and early at 5 am to head out to the Alemany Flea Market.  As you all know, he collects casino chips and his new BFF was there with a BUNCH of chips.

The one thing that is AWESOME about being up that early ~ catching the sunrise as we headed to Starbuck’s.

I got the “usual” ~ Venti Iced Nonfat Decaf “Dirty Latte” (with 1 pump mocha) and a banana (4 points+).

For lunch, we decided to try the new Chicken Potstickers we picked up at Sam’s Club.

Deal ~ SIX for 7 points+

IMG_7501

I LOVE how they get crispy on the outside ~ Potstickers are by far one of my favorite foods whether they are homemade or frozen.

IMG_7511

Served up with a BIG Spicy Asian Slaw ~ My broccoli carrot slaw topped with 2 Tbps Trader Joe’s Spicy Peanut Vinaigrette and 1 Tbsp Sun Flower Seeds (3 points+).

IMG_7504

I have pretty much decided that Healthy Nachos is going on my list of FAVORITE meals to have.  As in, I seriously could have them like once or twice or three times a week.

The SECRET INGREDIENT that makes THESE HEALTHY NACHOS awesome is BAKED Extra Thin Mission Tortilla Chips topped with sea salt.

IMG_4983_thumb

Then again, it might have been the tomatoes from our garden!!! (yup, our tomato plant is STILL producing tomatoes – love that!)

IMG_4981

Spiced up with Taco Bell Hot Sauce ~ it’s in a bottle – not the packets….Open-mouthed smile (10 points+)

IMG_4989

The BEST part is I made LEFTOVERS on purpose so I can have these for lunch tomorrow too!

HERE IS WHAT IS ON MY MENU THIS WEEK:

* Teriyaki Shrimp Skewers, Brown Rice, Cucumber Salad

* Maple Turkey Burgers with Kale Chips

* Cremini Mushroom Chicken with Mushroom Stuffed Zucchini

* Grilled Steak, grilled green beans & grilled romaine salad

* BTLA Sweet Potato Nachos and potato skins for him with big salads

Other ideas that I might make instead ~ Crockpot chicken tortilla soup or Chicken Enchiladas

Q’s:

What is one of your FAVORITE meals you could eat all the time & never get tired of it?

This is tough for me because there are SO MANY ~ but, I LOVE mac n cheese, buttered noodles, potstickers, chips/salsa, Healthy Nachos & Chipotle! Ok  ~ I’ll stop there since I was only supposed to pick one LOL.

Night all!

I totally go through phases – right now I’m loving a cup of whole wheat spaghetti with 1/2 cup marinara, sauteed mushrooms and spinach in 1/2 – 1 teaspoon of olive oil and parmesan cheese. Easy and so filling!

I have so many “favorites”, I can’t think of a very favorite 🙂 Your weekly menu is my favorite! I really need to try to put one together, even if I don’t stick to it 100%…how much do you vary? Or do you try to really stick to it? Moved into my new office in our new building over the week end and I’m in love! I have a lake view…which I deserve after being next to the rest rooms for 3 years lol.

I honestly think I can never get sick of potstickers either! I LOVE them!!! I have to try making them myself sometime too. Maybe if/when I get my own place (which should be soon!).

I don’t know if I can pick one! Right now, I love my healthed-up version of chili mac, pizza (preferably with a thick, “rustic”-style crust, and egg sandwiches…but I go in phases. I agree that potstickers are WONDERFUL. I love them with peanut sauce especially.

One of my current favorites that I could eat every day is egg salad sandwiches on very thin slices of rye bread. Served with a bowl of homemade vegetable soup if I have on hand. So easy and delicious. Also, I could probably eat sushi every day if I had the opportunity.

Well, I calories don’t count, I could eat huge bowls of spaghetti and cheese bread. But regardless of calories, I could eat pancakes for 2-3 meals a day. I’d just top each one with different toppings. 2 other food I never get tired of is peanut butter and ice cream (not eaten together, but I do at times). I do eat them every single day!! I have ben for years! Good things I never get tired of running huh?

My new ‘trick’ is putting drops of liquid smoke in the brine of jarred olives and letting them soak in the flavor. These olives add new flavor to any dish, ie egg salad. Also make my own cream cheese ‘n olives. Chopped the olives in a food processor, add these to a block of cream cheese, a clove of crushed garlic and the olive brine to loosen up the mixture and cream all together.
