What is the STRANGEST thing you’ve ever had for breakfast?

Happy Monday all!  I think my new addiction is Egg Salad Sandwiches ~ you know, since, I am officially a “pro” at making them now.  This makes the 3d time in my life I’ve made it now Open-mouthed smile LOL

It’s totally “normal” to have an egg salad sandwich for breakfast, right??? eggs….bread ~ it works!

* 1 egg plus 1 egg white (2 points+)

* 1 Tbsp LF Mayo (1 point+)

* 1 tsp mustard

* Sea Salt and Black Pepper

Smooshed and piled on top of 2 slices Trader Joe’s Fat Free Multi-Grain Bread (3 points+) and topped with crushed red pepper flakes to make it look like bacon.

With a side of “banana & strawberry chips”.

My breakfast actually made me feel “stuffed” and it only cost 6 points+!

I am pretty sure my co-workers think I am crazy because I don’t actually make up my lunches BEFORE work very often.  By that, I mean, I actually take EVERYTHING to make them up….2 bags of lettuce, 1 bag of carrot, peppers, cherry tomatoes Open-mouthed smile

It’s totally normal, right?! I mean, it saves me from having to wash more dishes by packing it all separately LOL.

* Organic Mixed Greens combined with Organic Butter Leaf

* Organic Shredded Carrots

* Organic Sweet Yellow Pepper

* Organic Cherry Tomatoes

* 3 oz Organic Grilled Chicken Tenders that I marinated and GRILLED last night in Trader Joe’s Spicy Peanut Vinaigrette!

All topped with 2 Tbsp Trader Joe’s LF Spicy Peanut Vinaigrette (5 points+)

Plus a pear for good measure……

Dessert ~ 2 more of those delicious Low Fat Banana Nut Bread Cookies (4 points+).  I actually think they taste better the next day than they do right out of the oven.

Since The Husband had the day off he completely surprised me by cooking dinner!  He actually called me this afternoon to ask what on our “weekly menu” he could make ~ yeah!

We started off with simple salads topped with 1 Tbsp Trader Joe’s Balsamic (my favorite new dressing!) and 1 Tbsp Parmesan Cheese. (2 points+)

Alexia Garlic Baguette ~ 2 BIG slices for only 3 points+!  I ALWAYS look for ways to add this bread to any meal ~ it’s amazing!

Tadah!  Spaghetti with meat sauce a la The Husband.

* 1 Cup Barilla Plus Spaghetti (5 points+)

* 1/2 Cup Meat Sauce made with Trader Joe’s Arabbiata Sauce, mushrooms, onion, garlic and 96% lean ground beef (2 points+)

* Sprinkled with crushed red pepper flakes, parsley and  Tbsp Parmesan Cheese

The perfect ending to a Monday ~ DOVE LOVE (4 points+)

What is the STRANGEST thing you’ve ever had for breakfast?

I’d have to say I got a little “creative” in September when I decided to have a serving of vegetables with every breakfast.  Aside from that, I think it’s pretty weird to eat Egg Salad for breakfast but it was SO GOOD I’d do it all over again.

I actually have a co-worker who makes me hungry every morning because she eats tacos, fried chicken, burgers, pizza….I should probably venture out more to non-traditional foods because I bet they taste even better in the morning!

    Pickles. Lol and no I wasn’t pregnant 😛 … oh I also don’t make my lunch up ahead of time… I just grab what I need to make it and go. Good thing I have a roomy lunch bag!

    I don’t think egg salad for breakfast is at all strange…BWW (before weight watchers) I would chow down several pieces of cold pizza with a cuppa java 😉

    My weirdest breakfast was escarole and beans yummy for dinner tasted great but holy garlic!!! I love garlic

    I am haven’t found a low fat mayo that I like, what kind do you use in your egg salad?? Your egg salad looks delicious!!!

    right now I am eating a big bowl of tuna mixed with olive oil. It’s part of my experiment to get in 30 g of protein as soon as I wake up.

    I often eat leftovers for breakfast. On Weigh In days i pack a sandwich and eat during the meeting while everyone else is eating yogurt, oatmeal or fruit.

    I love egg salad for breakfast. I can eat pretty much anything for breakfast. This morning is chicken with roasted veggies. I have had antipasta salad, tuna, hamburger. I did southbeach for a long time and burned out on eggs for breakfast.

    One morning I was craving Avacado so I mashed part of one up with banana and put it on toast. It was weird but delicious at the same time!

    There isn’t any food I won’t eat for breakfast, it’s whatever is there that looks good!
    I mix mostly mustard in my egg salad and don’t bother with the mayo cause I don’t like the light stuff. Also, gotta have paprika on top, makes it look pretty.
    No one mentioned cookies for breakfast, why not? If you can eat the banana muffins with coffe, why not cookies.

    I tend to stick to the more traditional breakfast foods..but eggsalad, fits that description, I think! I am not a huge fan of any cereals though. But recently won a box of mulitgrain cheerios, and enjoyed that for a week or so until it was gone!

    Late last night I saw the Blueberry Protein Pancakes on Friends for Weight Loss and new I had to make them this morning. Wow! My husband and I loved them. They may replace my daily “egg mug.”

    While I was on vacation last week I had grilled cajun mahi mahi with ‘ancient grains’ (not sure what they were but they were colorful and yummy) – I only ate half and took the rest back to the room where we had a kitchen. The next morning for breakfast I added the fish and grains to my oatmeal with a little dried mango. It was delicious! I just wish I could recreate it now that I’m home. 🙂

    I am more of a breakfast foods person for breakfast but I may have to venture out and try some egg salad!

    P.S. – I have chicken marinating in the fridge right now in the Spicy Peanut Dressing. Can’t wait to try it!

    Would you have your husband call my husband!? Mine is a fantastic kitchen cleaner, but just doesn’t cook. I’m sure he could learn a thing or two from yours!!! How nice to have dinner made for you! Egg salad for breakfast seems like a good idea to me. Have a great day Danica!!

    That egg salad is SOOOO much better than what they have at TJ’s don’t you think now that you’ve made it? Nothing like homemade. Speaking of TJ’s, I never thanked you for getting me the list so I could print it! Thank you so much! We are military and having a TJ’s within reasonable driving distance is on my must list!!!!

    I recently started following you and I have to say that I look forward to your daily posts. They’ve gotten me out of my food rut, given me inspiration to find a way to lose the weight and makes me feel not so alone on the journey. In your honor, I made an egg salad sandwich for lunch! Although I love to cook, I’d never hard boiled eggs before so that should tell you how dedicated I was to the cause. Keep up the good work and thank you!

    I haven’t done it in a while, but I love quick oats mixed with hot sauce and cheddar cheese, then topped with a “fried” egg white and a tablespoon of bacon bits – holds me forever!

    Yum – I love egg salad sandwiches for breakfast! 🙂 My weirdest one (which was super-yummy) was leftover Chinese Fried Rice with a fried egg on top. So, so good.

    I love the idea of “other foods” for breakfast. If im in a rush I grab a grilled chicken breast from the fridge on a sandwich thin and a slice of veggie cheese. Leftovers are great too.

    Great photos of the food. Can your husband give mie cooking lessons?

    I feel that I’ve lost so much weight by thinking “outside the box” when it comes
    to food choices for breakfast or dinner. I often mix them up! Protein is
    really important to jump start my day, and so I may have a grilled piece
    of fish for breakfast and egg whites scrambled in Crisco “butter” spray (the BEST!) with swiss chard, mushrooms and onions for dinner. Not getting
    bored with food choices is one of the reasons I’ve been successful with my
    weight loss. Food is fun, not dull!

    It’s funny cause I don’t find my breakfast weird but others might… It consists of:
    – Egg Whites, Pureed Pumpkin, Cinnamon & Roasted Butternut Squash Slices mixed together and cooked pancake style and sprinkled with powdered Stevia when done! SOOOOOO good!
