Happy Sunday all! It is so FUN when I get a recipe so right that a few of you go out and buy the ingredients to make it that night ~ I LOVE that! I do admit that 4 pointsplus Slow Cooker Kale, Kielbasa and Bean soup is absolutely delicious. It will definitely make it to our menu again.
This morning we had the chance to attend our Weight Watchers meeting at the new location. It is so AWESOME ~ I LOVE the Bright Green Chairs….I will be taking pictures and sharing soon.
The Husband is the ROCK STAR this week losing 3 lbs! I knew the scale would not be my friend since it’s the wrong time of the month and I was up 1 lb. I am completely OK with that because I have not doubt it will disappear and then some next week. I came so close to my 7 lb Valentine’s day goal by losing 5.6 lbs out of 7.
MY NEW GOAL ~ EASTER! I LOVE setting mini goals because it makes it easier to focus on losing in small increments. When I originally started Weight Watchers, I could not fathom needing to lose 65 lbs ~ it felt too big, too overwhelming. My FANTASTIC leader asked me if I could lose 5 lbs and I was like sure! So, he told me to prove it to him….then, I kept proving it over and over again 5 lbs at a time.
That being said ~ there are 55 days until Easter. My NEW GOAL is to lose 8 LBS by Easter (April 8th!) and to earn 14 Activity Points a week. My goal resets today and I will keep you all posted on how it goes.

This morning I couldn’t wait to dig into breakfast. Yesterday I whipped up a batch of my Brown Sugar Banana Nut Muffins, but, I made them into MINI MUFFINS.

The muffins paired perfectly with my FAVORITE new coffee ~ Gevalia Kaffe French Roast.
The folks over Gevalia know I have a “slight” coffee addiction and asked if I would like to try their new Swedish Coffees. I picked the French Roast today and it was absolutely delicious.

We spent the morning earning our steps by walking around the Sacramento Antique Fair. I ended up getting hungry about 4 hours after breakfast and decided to snack on the Popped Zesty Cheese Crisps samples they were handing out at our meeting.
I LOVE that the entire bag was full ~ they are thinner and lighter than PopChips and I bet the BBQ would be even more delicious.
Lunch was at Boudin Bakery ~ we both got the Pick 2!
1/2 a Spring Salad ~ the apples, cranberries & spiced walnuts totally make this salad (7 points+)
Mini Tomato Soup in a Bread Bowl. I only managed eating all of the soup and half the bread because I stopped when I was full even though my mouth wanted it all! (12 points+)
I was not really hungry for dinner so we decided to just “snack” on Chicken Potstickers we had in the freezer!
Sometimes ~ this really is all you need! (7 points+)
HERE IS WHAT IS ON THE MENU THIS WEEK:
- Weight Watchers Rigatoni with Sausage & Kale Pasta with Salad
- VALENTINE’S DAY ~ Either heading out to Buckhorn Steakhouse, Mikuni’s OR grilling up steak with cheesy bacon smashed potatoes and artichokes!
- Maple Bacon Turkey Burgers or TJ’s Chili Lime Chicken Burgers & Zucchini Fries
- Shrimp Scampi, Asparagus
- Spicy Chicken Fried Rice with Cashews
- BFD or Kale with Bacon & Cannelini Beans & Artichokes!
- Other ideas I am pondering ~ Mini Tamale Pies and I bought everything to make Butternut Squash Lasagna!

I think my goal will be 10 pounds…..:)…..I need to do a weekly menu….I can see where that works out great!…..and it’s always good when the coffee taste as good as it smells…Mmmmm:)

My Easter goal is going to have to be to work on getting my workout routine set. I just moved and am therefore trying out a new type of workout that doesn’t seem to work for my body to do the same thing everyday! So I need to mix up my days so I can stick to my schedule.

Actually, there is a Boudin Bakery in Disney’s California Adventure believe it or not 🙂 They make all kinds of different loaves including those that look like Mickey’s! I love their soup and bread bowls 🙂

I am encouraged every time I read your post. I get as much here as I do at my Weight Watcher meetings. Maybe more!! One thing that has helped me so much is your variety of food and how you are always trying new things. I get so bored with the same old food day in and day out. You have helped me see that I can have a variety of great tasting food at home and eating out. I don’t have to change my lifestyle completely, I can still go out to eat and eat within my WW Points allowance. AND BE SATISFIED!! I love the 5lb goals, I think I will try that!

Since I am just getting back on track with my WW my first mini goals are to plan better, weekly menu’s, and at least attempt some sort of activity. I injured my foot back in the fall and doing certain things still flares it up not to mention the dress shoes I wear on Sunday’s to church can be bothersome as well. The complete healing is just a slow process I’m told plus the extra extra weight I’m carrying makes it harder. I would love to be down 10 lbs as well.

My Easter goal is to walk 30 min a day, 6 days a week on the treadmill and keep counting points with the goal of losing 3 lbs. I am Type 2 diabetic and 69 years old so the weight doesn’t come off very easily and keep repeating lifestyle, lifestyle, lifestyle!!

I was just writing in my journal this morning that I love the short-term goals too. When I joined WW 12/31/11 (yes it WAS a New Years Resolution!!), I clocked in at having to lose over 100 lbs to lose. Mini goals makes it much more exciting and way less overwhelming. I did meet my V-day goal! 14 lbs down and reached my 5%. My next goal is for St. Patricks Day (I’m a MAJOR beer person so OF COURSE, I’m gonna celebrate this one!!). I’d like to reach my 10% by St. Patty’s, which means 10 lbs in a little under 5 weeks. I’m on a roll with my 1/2 marathon training so I think it’s possible. Won’t be crushed if not, but aiming high!
PS…love the new center too. Thanks Danica, your recipes really keep things “fresh” for me!

I, too, gained one lb. last week (I believe I’m following the plan). Thanks for the encouragement. So I didn’t track yesterday. (What’s with that?? Punishing WW??) LOL.
Back on track today with a 5 lb. by Easter goal and three gym sessions per week.

The Kale soup looks amazing!! I am going to add it to our menu plan for next week. I have to tweak al ittle bit because my fiance can’t eat any poultry, so I have to use either all beef or beef and pork, so my soup will be a little bit higher in points, but I am sure still yummy!!
My goal for Easter is to lose 10lbs. I am also setting a goal for the next month of at least 3 workouts per week (I have been having a hard time in that department lately), and then increase the following month to 4 and then to 5 per week by mid April.

Danica I love how you inspire me! I am gonna copy your goal I wanna be under a certain number by Easter and 8 lbs. would put me 3 under…. so hope you don’t mind! My other is to keep up the gym as I have been doing to 5 days a week! I missed one day last week!… So far dinner’s this week are: Mon. Cornmeal coated fish from new WW cookbook with steamed green beans and red bells, and “roasted” baby potatoes..
Tues: for Vday I am making shrimp tomato pasta, salad and french bread for the kids and hubby red velvet cupcakes…Wed: chicken stir fry with rice, Thurs: maybe fish tacos or turkey burgers have decide yet!

I think I might make that same goal with you… I would be thrilled to lose 8lbs by Easter. If I can just keep doing what I’m doing I think I can make it happen. I like the idea of making short term goals. Mine seem so far away and it can be demotivating.

I made the squash lasagna and I loved it. I cut it up and froze the pieces and just nuke them for 4 minutes, covered in plastic wrap and in a glass dish. I love it, but hubby who has always been thin did not like it so much. I did use whole grain noodles and lower fat cheese and added craisins and raisins. Love it!

I would love to lose 10 pounds by Easter!!! I just did my first week (again) and lost 6 pounds, but know that is not normal so 10 pounds by Easter seems doable. Thanks for all of the awesome inspiration and information. Love the new green chairs too!

I love your enthusiasm and determination! I have officially been at goal weight and maintained for one year!! It’s your postings and constant devotion to WW as well as the meetings that I still attend EVERY week that has kept my weight constant. That being said, I’m ready to move a little bit lower into my official “weight bracket” . . . I’m still at the high end for my height. I will join in the 8lb challenge! I think it’s a great goal!
