Happy Monday all! I wanted to give you all a goal check in. My January resolution was to get back to 100% tracking and I have to say it was successful. Not only am I tracking every BLT, I’ve turned down some foods after seeing their points.
Next in my list for February is to focus on getting back to being active most days of the week. Instead of saying I’ll work 5 times a week, I am making a goal to workout 10 X’s this month. It may be more but this allows me to continue easing back into it but also makes it realistic.
I know I will not go from 0 to 5 days but I can totally fit in 10 workouts.

The Husband didn’t want breakfast this morning and I was really craving an omelette.
Enter my 2 minute Farmer’s Market Egg White Omelette with bacon, caramelized onions and cheese (5 sp) with a side of berries.It didn’t take much convincing at my AM meeting to head to Wok of Flame for lunch to celebrate Chinese New Year’s Eve.
Won ton soup (2 sp)3 Homemade Chicken Potstickers (5 sp)I didn’t want all veggies so I had half veggies 1/2 chow mein – But, I scooped all the noodles into a togo container for my coworker keeping just 2 bites for me.
I felt like I got to have it all that way – shrimp with black bean sauce, steamed veggies and 2 noodle bites (3 sp).Plus a cookie (1 sp) and a tall nonfat cappuccino to finish (2 sp).At our Jeopardy Safety Training meeting they gave us these Jacquet Brossard Petite Brownie’s. Fun fact – these are made by our sister company with the seeds we grow for the flours, etc.Being a team player, I totally had one. I had planned on two bites then saving the rest for The Husband. But, it was so soft and goey with crunchy chocolate bits, I ate it all (4 sp).I feel so proud of our dinner tonight. This recipe evolved in my head based on everything I was craving. For the first time ever, I cooked frozen chicken in my Instant Pot and it worked.
