When you can eat out and have amazing chef’s do the work for you :D I just realized as I sat down to catch you all up on the past two days that I have dined out 4 out of 6 meals ~ Fun! I did my best at balancing it to make healthy choices.
BACK TRACK TO FRIDAY
I started off my day with an AMAZING 5 point Pear-Wich!
2 Slices TJ’s Mulit-Grain Bread
1 Tbsp chunky Almond Butter
1 awesome pear sliced for “jelly”
It was completely filling and delicious. This combo kept me full all morning long. My mid morning snack included a little protein (that counts as my dairy and is only 1 point) plus some carbs :D I HEART POPCHIPS, but, I am pretty sure you all knew that by now.
Glad these packs are only 2 points and
They have a good ingredient list. Now if you could only find these 100 calorie packs on sale at like Costco ~ that would be AWESOME!
I had planned on doing an outdoor cross training walk, however, my co-worker tempted me with two words ~ SUSHI MAMBO!!! I heart Sushi and Sushi Mambo is about as good as sushi gets in Napa. It helped that it was raining outside too 🙂
I started off with some MISO FANTASTICNESS for 1 point.
Then, we split two SPICY rolls.
The High Roller….
Just for the Halibut (YUP – that would be LOADS of Sriracha sauce on top of that seared Halibut on top)
There is ALWAYS one given when we go to Sushi Mambo…..THE VOLCANO. It is FIVE types of SEARED fish in their SPICY Mambo Sauce (that has sriracha as a base) on top of rice. It’s so hot that you get sweat above your lip and drink all your water. LOVE it….we shared this too.
I pretty much had no desire to go back to work after, but, we had too *sigh* I think I just need to win the Lotto and become independently wealthy :D
When I got home my 30 minutes of cross training was some Gentle Hatha Yoga ~ it felt so great to get in some deep stretching.
The Husband had to work late and I was feeling like I’ve been missing veggies all day. He asked if I wanted to meet him at Panda Express on the way home so of course I did :D You can actually make really smart choices there that are low in points. Here is how I do it….
I usually check out their online nutritionals and pick the lowest calorie/fat options. My FAVORITE is the string bean chicken which is only 3 points!
Plus a side of Broccoli Beef (another 3 points!)
Then, I get the steamed mixed veggies instead of the rice or chow mein for 1 points.
Not too bad for a 7 POINT (375 calorie) dinner (that you didn’t have to cook) and it’s loaded with VEGGIE-goodness.
FAST FORWARD TO SATURDAY!!!
I decided getting my first LONG run in early in the day was the best option. I hopped on the treadmill and pounded out 4 MILES using a 3:1 (run:walk) interval. It felt AMAZING ~ I finally feel like I have my breathing back and now it is just a matter of getting my muscle endurance up. I felt like I could’ve kept going which is right where you want to be when you train….not too much, not too little.
Breakfast was simple ~ TWIGS and FIBER!
1 c Kashi Go Lean
1 small banana
1/4 c blueberries
1/2 c FF Milk
4 Points and it kept me full all morning as we ran errands all morning. We were both cracking up when we parked at Sam’s Club and saw that you could get rides on none other than THE MONSTER BUS!!!
So funny! Of course we had to send a picture to our nephews to ask them if they wanted to ride the “kool bus” to school (they are all 3 boys).
After we finished shopping and on our way to help my niece move, we stopped at Vasquez for a quick bite. I surprisingly wasn’t super hungry so I had a 4 point chicken taco.
Then about 1/3 of The Husband’s nachos. I pretty much eat these for those spicy jalapenos…nope the red are not hotter 🙂 I had to taste test that.
After moving, we replenished with something I received from Santa in my Christmas Stocking….Some Soda Pop Shoppe Jelly Belly’s. Jelly Belly’s are quite possibly my FAVORITE candy.
So cool that my DROID also doubles as a plate 😀
We met my Mom for dinner since my dad was at the Art Walk where he displays and sells his AMAZING photography pictures.
The place we went to called Garcia’s I remembered being alot better than it was. I ordered the Shrimp Avocado Salsa with the Raspberry Vinaigrette on the side. The SALAD was HUGE…The best part was the grilled shrimp and avocado…
But the rest wasn’t all that impressive…just lettuce and their dressing tasted like raspberry sherbet which was weird. It was too sweet so I didn’t eat it option for a lettuce only lettuce since I don’t eat the greasy shell.
After dinner, we walked the Art Walk and brought my dad a chocolate milk shake. I had total ice cream envy for sure 😀
When we got home I spent some time getting caught up on where the hikers are in their climb of Mt Kilimanjaro. I totally LOVE the Summit on the Summit cause and the people. I think it’s cool that they are using their celebrity status to help raise awareness about the lack of clean water in the world. I really do not think everyone realizes how lucky we are to have clean water every day to use in every way.

Mmmm Panda is amazing!! And string bean chicken is my FAVE as well. I do the same as you and get the veggies, string bean chicken, and then one other healthier dish – usually the mushroom chicken. I recently tried the sweet and fiery pineapple chicken because it had a “healthy symbol” next to it on the menu – only to come home and find out it was like 500 calories per serving! Not so healthy in my book :-/ haha.

Thanks for sharing what you get at Panda. We eat there often (YIKES!) and I do get the Wok Smart menu stuff but never thought to get the veggies instead of the stinkin chow mein so from now on I will do that. I haven’t tried the string bean chicken but I love the beef/broccoli.
Congrats on your run! You did a great job. I ran some today woot woot. I did total of 2.25 miles on treadmill but 1.12 of it walking (1 lap walk/1 lap run). It was just to see what I was capable of and testing out the waters today with my new running shoes. My average was 4.4 miles/hr. Not sure what that means but my hip is killing me right now. I did run after an hour spin class so I have to plan accordingly ha ha
