Happy Friday Eve all! This morning I woke up knowing EXACLTY what I wanted ~ A Wafflewich! It has been so long since I’ve made a wafflewich. I have been craving Kashi Go Lean 7-Grain Waffles for a LONG time now.
It’s so easy to make Waffle-Wiches ~ you can totally pick any toppings from Almond Butter, Peanut Butter, Jam, Nutella, Bananas or any fruit for that matter.
This morning, I picked one side covered with delicious Apricot Jam…..
The other smeared with freshly ground almond butter…..
Smooshed together and sliced diagonally. (8 points+ and worth every sweet, crunchy, nutty bite).
This morning I totally rushed out the door barely making it to the train station only to have my train CANCELLED! How does that even happen? lol…..
It’s ok though, I waited for the next one and totally made the most of it with my mid morning “Wine” & Cheese Snack!

I have decided that I am completely IN LOVE with Posole Soup. I have never had it until this year and now every time it shows up on our Café menu, I have to get it.
Today’s Soup Fusion ~ 1/2 Tuscan Vegetable Soup combined with 1/2 Pork Posole (7 points+)
Whenever I cannot decide what flavor of soup I want, I MIX THEM = Soup Fusion! You get the best of both worlds and it seriously makes soup taste even better.
The next time you are at Whole Foods try it by mixing Southwestern Tortilla with Turkey Chili. It is amazing and it’s fun to see people’s faces wondering what you are doing
Mid afternoon “crunch” Veggies with ranch dressing (2 points+)
One of the COOLEST parts of where I work now is that I can actually see the River Cats Baseball Stadium from my office window. My Nephew actually had a chance to play one of his games there today so I headed over to watch after work.
I am not sure who was more excited ~ our nephew or The Husband. So fun!
After the game, we headed over to Mary’s Pizza Shack.
I started with my FAVORITE simple salad with 1 Tbsp ranch, fork dipped (4 points+)
2 slices with 1 tsp REAL butter (3 points+)
Then, we shared an order of Spaghetti with meatballs (built in portion control!)
Our waitress even remembered to put it in our own mini pasta bowls.
1 ball with about 1 cup of pasta for 9 points+.

How do you top your waffles?
I actually LOVE my waffles plain, topped with whipped butter, syrup, coconut, fruit and I can pretty much put anything inside to make a wafflewich on the go sweet or savory (hello Morning Star Chick Patty with Spicy Hummus or Morning Star Sausage and pure maple syrup).
Just ONE more day….but, who is counting?!

My latest thing is 1 oz of FF or RF softened cream cheese with sliced strawberries on top a very small drizzle of lite or SF syrup. The other day, I added 1 tsp brown sugar, cinnamon, and a bit of vanilla flavoring to my cream cheese and YUM. So good!

I love the Kashi waffles. I dip them in Fage Greek yogurt with berries. Delish!
I love wafflewiches! Two of my fave combs are: jam + 1 egg + parm cheese + slice of Canadian bacon OR simply PB + raisins + cinnamon 🙂 Orrr if I don’t sandwich them, I enjoy them most often with a dollop of PB Greek yogurt!
I really like whole grain waffles with some cottage cheese on top, sprinkled with Mrs. Dash. Also I always have my buns and sandwiches or waffles open faced, because it just seems like so much MORE!
I love the idea of soup fusion. Thanks for the hint. (I used to do that with gelato/ice cream but this would be so much better for me).
Lately the biscoff spread has been calling out to me; when I was in Vegas on business last week, I was at Walmart and found CRUNCHY biscoff spread…have never seen the crunchy is South FL, so had to buy a jar to bring home! Also like some of the nut butters I get from: http://www.valleynut.com they are all natural and fresh ground when you order; have tried walnut, pistachio, hazelnut and a few others!!
I love posole, too. Years ago, I made a much healthier version of is and just call it Southwestern Soup. Took it to work and had my friend test it; she shared it with her husband and it was approved as the best! That was the real test and it passed. You have to have the sides though, the chopped, radish, cilantro, lime wedges and a little bit of chopped avacodo. Delicious.

I adore PB+Banana slices! I often bulk up the peanut butter with some canned pumpkin which is yummy (I heart pumpkin all year long). I’ve recently discovered PB2 (powered peanuts with some salt & sugar that you mix with water). Really good and I can have a lot more PB for the WW Points!
I’m a big fan of waffle-wiches too!
As for waffle toppings, my favorites are cottage cheese + cinnamon & raisins, or PB + banana & honey.
I’m not a huge waffle person.. unless their savory! give me eggs, salsa, and cheddar! 🙂

Hi Danica, I’m new to WW – how do you count wine and other alcohol with WW points? I only ask because I see you don’t blog about it and I am curious. Do you not count it or do you not drink? Sorry if it’s a newbie question!

It depends on the type of wine you have, white or read, but you can usually enter the nutritional info into the points+ calculator to know or look it up in the tracker. In general, 4 oz is 4 points+.
I generally do not drink wine because I prefer to eat my calories, but, I do occasionally have it. It’s a personal choice.
