Happy Monday all! How are you doing? I feel like it’s been forever since we’ve chatted. Thank you all for all the welcome back messages and comments. I am proud of the fact that I didn’t completely blow it in France by focusing on intuitively eating and walking everywhere. My two weeks added up to only 1/2 a lb which I intend to lose this week. I am excited the WW Summer Challenge is here too!
I am slowly making my way back into my groove. I made up a a menu for the week and stocked up on healthy eats. This morning, probably due to the time zone change more than anything, I was up early and knocked out a 36 minute treadmill workout.
The Husband made us Healthy Eggrolls with berries for breakfast (3 sp).I stopped on my drive in for a much needed caffeine fix – tall nonfat cappuccino with caramel on the foam (2 sp).I had planned on walking to lunch with my friend to catch up on my trip, but, today was 105 degrees so we drove to Work of Flame.
Is it weird that hot n sour soup can still taste good on such a hit day? (2 sp).I couldn’t resist having 3 of these homemade chicken potstickers (5 sp).I balanced it out by getting all steamed veggies (no rice or noodles) with my Kung Pao Chicken (8 sp).
Add 1 point for my fortune cookie too.The Husband put in a request for Buckhorn convincing me it was too hot to cook. I really wanted a salad so that worked out perfectly for me.
Yik Yak Salad with Chicken: greens, cabbage, jicama, red peppers, crispy pasta & toasted almonds, snow peas, cilantro and green onions with the sesame dressing on the side (5 sp).
