Hi all! How was your weekend? We have had a great weekend so far and I am really looking forward to having one more day off tomorrow.
Before heading out this morning to let The Husband get his antique fix, we stopped at Subway for breakfast. This might be my favorite new low point way to order.
I basically had an omelette (removing the flatbread) and eating just the egg, ham, cheese and veggies for only 2 Smartpoints.We did grab grande iced Nonfat lattes with caramel drizzle on top for the drive to Pleasanton (3 sp).
2 Antique Fairs and 1 Farmers Market later, we stopped at Yokoso Sushi.
Zero Point Edamame.Miso Soup & a side salad (2 sp)Then, we shared two rolls. I’m so proud of The Husband for actually eating sushi with me. I told him the fishies are good for his heart and it worked because it made him feel healthy eating it lol.
4 Pieces of Tuna Steak (spicy crab, ahi, avocado, green onions, tobiko, sweet & spicy sauces). 4 sp4 Pieces Pleasant Hill Roll (tempura shrimp, crab, ahi, yellow fin, avocado, special spicy sauce) 6 spWe relaxed for a bit and I caught up on some magazine reading before whipping up our second BBQ of the weekend.
I made these cute mini cheeseburger sliders.Topped with ketchup, mustard, a single pickle and served on King Hawaiian rolls. (5 sp)My sides were tossed salad with 1 Tbsp Newman’s Light Lime Vinaigrette (1 sp) and 2 oz Alexia Garlic fries (2 sp). For perspective, this plate is our small salad plate.I made these 3 sp Angel Food Cupcakes for everyone for dessert. I will serve them with strawberries and whipped cream. I am currently debating just berries for me or one of these later….it will be a game time decision lol.25 Daily WWFreestyle Smartpoints, 13K steps

I have a few questions. 🙂 #1 – Do you sweeten your Iced Latte? I want to order one, but don’t want to look like a fool. I get a little intimidated when I order at Starbucks. hahaha
#2 – My husband and I LOVE LOVE LOVE sushi. How do you know how many points to give the rolls you order?
#3 – Can you share your recipe for the Angel Food cupcakes? Thank you Ma’am!

Hi Kristine,
1. I do not sweeten my black coffee or lattes usually. However, I’ve been on a kick ordering a Grande Iced Nonfat Latte with light caramel drizzle on the top only. It gives it just a hint of sweetness and comes in at 3 Smartpoints. If I want chocolate, I will ask for 1 pump then add 1 additional point.
2. I count my all fish rolls by searching spicy tuna roll or rainbow roll. I count the ones with tempura shrimp on the inside by searching tempura shrimp roll. I then change the serving to pieces and add how many pieces I had. If you like sashimi it’s all zero. Most rolls are about 1 point per piece, brown rice I think might be less. California rolls you get 6 pieces for 4 points. You can see the rolls by searching sushi.
3. It’s not a fancy recipe at all. I used the Betty Crocker Angel food mix, added 1 1/4 cups water, lined 30 cupcake holders and baked at 325 for 16-18 minutes.

Oh my gosh!!! That doesn’t help a bit…it helps A LOT!!! Thank you so much for taking the time to write me back!!! I assume, by Nonfat – that means you get skim milk in the latte or are you adding some caramel protein shake? I can’t eat sashimi…it makes my skin crawl! My husband, however savors each and every bite. I’ll stick to the edamame and rolls. I didn’t know I could search those by typing in sushi. Thank you for sharing that with me. Thank you also for the cupcake recipe!! I appreciate it more than you’ll know.
