Happy Monday all! Today’s eats were simple, yet delicious. I woke up craving a healthy Eggroll as well as Toast with almond butter and banana. So, I decided to have one for breakfast and the other for lunch. Lunch was exactly as it should be – fast, tasty and filling. I seriously need to remember easy lunches like this when I think there is nothing to eat or I don’t have time.
The Husband wanted burritos for dinner and I wanted taco salad (because you get so much more for your points). I started out with a burrito using half of my fixings then used the other half to make a salad….It was so awesome and satisfying to have the best of both worlds that felt like so much food.
I also checked off my 10K step goal today making this one successful, on track day that I feel good about.
