Daily Snap: Best of Both Worlds

Happy Monday all! Today’s eats were simple, yet delicious. I woke up craving a healthy Eggroll as well as Toast with almond butter and banana. So, I decided to have one for breakfast and the other for lunch. Lunch was exactly as it should be – fast, tasty and filling. I seriously need to remember easy lunches like this when I think there is nothing to eat or I don’t have time.

The Husband wanted burritos for dinner and I wanted taco salad (because you get so much more for your points). I started out with a burrito using half of my fixings then used the other half to make a salad….It was so awesome and satisfying to have the best of both worlds that felt like so much food.

I also checked off my 10K step goal today making this one successful, on track day that I feel good about.

Daily Snap Recap:

B: Healthy Eggroll (Mission Extra Thin Yellow Corn Tortilla, Sargento RF cheddar, Fried Egg, Sriracha) – 5 SP, 1/2 Sumo Mandarin

S: Tall Nonfat Cappuccino with caramel on top (2 SP)

L: 1 slice Oroweat Honey Oat (2 SP), topped with 1 Tbsp Almond Butter (3 SP) and a banana, a couple strawberries, cucumber slices, mini sweet pepper, Tillamook Marion Berry 0% Greek Yogurt (4 SP)

S: Tall Nonfat Cappuccino with caramel on top (2 SP)

D: Best of Both! – Burrito (La Tortilla Lite Tortilla topped with 1/3 c refried beans, 1/4 cup Turkey Taco Meat, 1/2 oz 2% Mexican Cheddar, lettuce, tomato, sweet peppers, green onion, hot sauce, jalapenos) – 7 sp and a mini taco salad (1/4 cup Turkey Taco Meat, 1/2 oz 2% Mexican Cheddar & all the fixings) – 3 sp

28 Daily SmartPoints with 2 left for a snack!

  • Sausage, pepper, onion & mushroom kabobs, rice
  • Shrimp Scampi, salad
  • Teriyaki Burgers, Kale Chips
  • Tortellini, Chicken & Arugula Salad
