Happy Cinco de Mayo Eve all! Every now and then I get these crazy ideas in my head for recipes to make or foods to try. I am so easily influenced by foods I see, magazines, TV shows… basically show me something delicious and I’ll probably think about it until I finally make it lol…true story.
Enter Chilaquiles – I can honestly say I’ve never ordered this in a restaurant or made it but I live the idea of tortilla chips, eggs and fresh salsa.
I used my farmers market tomato, onion, jalapeno and cilantro from our garden for a quick pico de gallo.
I knew I’d have to share with The Husband so I doubled my eggs with a little milk, hot sauce, salt & pepper.
Scrambled up with 1/4 cup 2% Mexican cheese.
Any guesses on what inspired me today?! Yep, it was those mini Chili Cheese Fritos that The Husband bought for our Frito Salads last week.
It’s ok, I totally “balanced it out” by adding fresh veggies to the mix to make it healthy. 😀
We both loved this – the brightness of the tomatoes & cilantro went so well with the crunchy, salty chips. 1 serving is 8 SmartPoints.
The rest of my day probably isn’t as exciting but I enjoyed it. I really wanted more chips with lunch because honestly I only eat sandwiches so I can have chips with them. I compromised with 1 Tbsp pistachios and you know what…it was just as satisfying for only 1 SmartPoint. We both ended up working pretty late so it was pasta leftovers for dinner.
Today – I’m proud that I didn’t dive into any junky snacks while working late and fit in a walk chalking up over 13K steps today.
