Happy Tuesday all! Today started off with a protein powered breakfast that involved Krusteaz Complete Buttermilk Pancakes topped with a little whipped butter, pure maple syrup, coconut and banana. Served up with coconut coffee. This totally hit the spot, fueled our 2 hour hike and kept me full for 5 hours.
Here are a few snaps from the trail we walked today. We looped this lake before heading out to the nature trail.Normally I wouldn’t dig running into random wildlife (I’m a total sissy like that even though I grew up in the country). However, today it was so fun seeing 2 deer families who were just as curious about us walking the trail.In this hole is a muskrat who had just walked out of the water. The River view was amazing and on the logs I “thought” were beavers but we saw signs on our way out that said they were otters lol.
They kept swimming back and forth knocking each other off their logs.We walked into town (another 30 minutes) for a Thai lunch. It should’ve been a short walk but we got lost using the navigator 😀 Definitely not as delicious as Mini Mango in Napa, but, still pretty tasty. I kinda love that they gave us fortune cookies at the end of our meal even though I forgot to eat mine.
I resisted Starbucks again today even though I really wanted it. 2 days down – Proud!

Hi Susan,
The coconut coffee is called Island Coconut from Green Mountain. I’ve also had a toasted coconut from Hawaii(Lion brand). Both are delicious! You know I’ve never thought of making my own, but, I should try it.
You’re not far from the trail – It’s Lodi Lake Park.

I have not heard of those coffees. I will now look for them. Trader Joe’s has/had coconut cold brew concentrate that I have enjoyed. I have also had coffee with coconut milk & enjoyed it. Starbucks has had some coconut specials that were nice. I’m all about good coffee.
Thank you for the info on Lodi. It’s not quite around the corner from me but if I’m ever in the area I will make an effort to stop & explore.

You know, I’m not sure I even explained why so thanks for asking. I’m trying to see if it will impact my hunger levels or food choices. So far, I’m not sure it has and I miss it! You are right though….my wallet is at least benefitting lol.
