Does it count as a recipe if…..

Hi everyone! Thanks for sharing your excitement over the Hot Pockets – I will be posting that recipe soon. For this week’s lunches, I whipped up a healthy, Thai Coconut Chicken Curry and made a delicious zero Smartpoints dip for Veggie dipping on the side.

The question I have is…Does it count as a recipe if all I do is throw a few things together to make this one pot dish?

All it takes is a quick trip by Trader Joe’s to pick up a few things.

I bought the individual organic coconut oil packets (about 1 Tbsp) that I heated over medium high with the minced ginger and garlic for about 30 seconds.

Add the diced chicken breast (1 lb), topped with salt and pepper. I used Sriracha salt because I had it. Cook 3 – 4 minutes to slightly brown the chicken.

Add about 4 cups fresh Asian veggies.

1 can reduced fat coconut milk and 1 bottle Trader Joe’s Thai yellow curry.

For a little spicy kick, I seeded and sliced a fresh jalapeno. Simmer for 10-15 minutes, until the veggies softened, the chicken is cooked through and the sauce thickens slightly. If you want a thicker sauce you could add 1/2 Tbsp corn starch during the last 2 minutes.

My last minute additions included 1 Tbsp brown sugar for a little sweetness and tomatoes plus basil from our garden.

It makes about 8 servings (2/3 cup) that I served over 1/3 cup Trader Joe’s Organic Jasmine Rice for 8 Smartpoints.

You get such a rich taste of sweet coconut with a little spicy curry that all those crunchy veggies soak up.

My other “semi-homemade” recipe was this dip they had at Trader Joe’s.

For all you Everything Bagel Lovers – this is all you need to make one tasty zero point dip.

One container Trader Joe’s Simply Free ( fat free) Sour Cream, 1/2 a jar Everything Bagel Seasoning, 4 scallions, diced plus a little sea salt & black pepper.

All stirred up and stored back in my sour cream container for easy scooping.

3 Tbsp = zero Smartpoints – serve it up with your favorite veggies and add 12 Lays Poppables for a fun Chip & onion dip for 2 Smartpoints.
