Happy Easter all! I hope you all had a great day celebrating and an even better weekend. This weekend we did a little walking in the sunshine, eating with friends, cooking too, watching movies / catching up on shows, gardening and having fun being big kids.
First things first – We finally planted this year’s garden.
In the garden box:
- Persian Cucumbers
- Regular cucumbers X’s 2
- Shishito peppers
- Lemon Thyme
- Heirloom tomatoes
- Somerset Tomatoes
- Sweet 100 cherry tomatoes
Then, our container garden:
- Grapes from last year
- Blueberries from last year
- Tomatoes
- Sweet Million Cherry Tomatoes
- Bell Pepper x’2
This morning I actually slept in a little, then made us healthy eggrolls with a Sumo orange (3 sp).
We grabbed Starbucks before stocking up on our eats for the week.
Tall nonfat cappuccino with caramel on the side (2 sp).Our Easter fun included being big kids at Scandia. We played a ‘competitive’ round of mini golf (I lost!) followed up by a bunch of video games (I won!)
The Husband is so dang sweet too. After we used up our game card, he reloaded it and gave it to a little girl who walked in with her family to play.Look how serious he is playing 😀
Even though he won, he bought us lunch at Jersey Mike’s.
I ordered the Mini Turkey & Provolone “Mike’s way” with jalapenos & pepperoncini. Everything about this sandwich is good but the juice aka olive oil, red wine vinegar & oregano make it awesome and worth the points.
8 WWFreestyle Smartpoints for my sandwich and 3 sp for a few of the chips I stole.We both decided that this Homemade Lasagna was the perfect Easter dinner.
Layers and layers of cheesy, noodley goodness in a rich, wine infused meat sauce….need I say more !?! (9 sp).
Served up with a delicious salad topped with apple cider vinegar and olive oil (2 sp).
I actually passed on the garlic bread as this was so satisfying, I didn’t need it.
