Hi all! How was your weekend? My weekend has been awesome. The scale is moving in the right direction and I lost 1.6 lbs at weigh in. I also hit over 10K steps both days, had fun watching a boy movie with The Husband (Bumble Bee – it was good) and had delicious eats both days.
I cooked up a batch of full size Crustless Kale Quiche Muffins for breakfast this week. I reduced the parmesan by 1 oz to make them 2 WWFreestyle Smartpoint each or 2 for 5 Smartpoints.After breakfast, I cleaned house then hopped on the treadmill for a 36 minute power walk.
Post work nonfat cappuccino (2 sp).I went with The Husband for his out of town meeting and took advantage of eating all my favorite foods in moderation.
Thai at one of my favorite places….
Peanutty salad starter (1 sp).I love these fresh vegan spring rolls. They are packed with lettuce, carrot, sprouts and herbs. The sauces are plum and peanut.
2 rolls for 4 SmartpointsI ate all the Thai Basil chicken and had just a couple bites of rice (5 sp).I spent the afternoon getting caught up on work hanging out at my favorite Barnes & Nobles.
A bit of fun shopping also happened and I scored a stainless steel egg steaming rack for my Instant Pot.
By the time dinner rolled around, I really wanted a glass of red wine. But, I decided on sparkling water just so I could spend my points on pizza. I think it was a great trade!I ordered a small Greek salad with chicken. I love this salad so much that I could just eat it for my main dish. But, I knew I’d want a piece of pizza so I compromised. (4 sp).Super thick, biscuit like crust with tons of real deal cheese, sausage and mushrooms. Our meals last week fed us more than one night so this week has a few repeats.
