Happy Weekend all! On our second day of our Hawaii Christmas Vacation, we got up early and kept with our keep active commitment hitting the hotel gym. I did 1 mile on the stair master, 1 mile on the bike then all the nautilus arm machines X’s 3.
After we checked out of our hotel (they gave us coconut macadamia cookies for the road!) then headed over to Eggs ‘n Things for breakfast. We’ve heard so much about this local place, I couldn’t wait to try it.I ordered the 2 egg scramble with bacon and green onions. I learned you really can only eat so many eggs – It was tasty but I could only eat half. It was alot of egg lol.?I had 1/4 of the banana pancakes that came as my side….The Husband also requested the whipped cream macadamia nut topper.?Holy moly! I am not a sweets in the AM person, but, these pancakes were awesome.
Light whipped cream with sweet bananas and maple syrup topped with a little salty butter and crunchy macadamia nuts. These buttermilk pancakes literally melt in your mouth.Our trip for the day involved stopping at the Dole Plantation and heading to North Shore to see the pipeline challenge.Did you know it takes 20+ months to grow one pineapple per plant? Crazy….?I also learned how to cut a pineapple and that rinsing it in salt water after cutting it reduces the acid in the fruit.Our plan was to grab sandwiches at one of the local delis and eat them on the beach watching the surfers.
I had half of this 8 inch turkey pepper jack with a few Maui Onion chips from Storio’s Deli. The soft sweet Hawaiian bread was the best part.The only bummer was the challenge had a lay day as the surf was unsafe. So, we just snapped pictures of the waves.On our way back into town, we did a little souvenir shopping. Check out the new flavors of mac nuts I found.
The Chipotle is like BBQ and the Sriracha reminds me of Sriracha almonds.We checked into Wyndham Royal Gardens before heading to dinner. Lobby view, our room & view plus the zen garden.They gave us both lei’s when they welcomed us and left this with a nice note on our pillow.
I already love this place 🙂We walked to dinner at Hard Rock Cafe. My Island fish tacos were simple, but so fresh and flavorful. I love that everything was on the side so you could build your tacos with whatever you liked: cheese, guacamole chipotle sauce, pico de gallo, black beans.I hit 14K steps for the day and feel good about my eats – success!

What a wonderful day spent!! I’ve been eating pineapple all my life and I never knew about rinsing in salt water. Learn something new every day. Hats off to you for working out before hitting the road. Takes the guilt off of splurging!!
