Nellie’s Free Range Egg Giveaway

Hi all! As promised, I am back today with an Eggsellant Giveaway from Nellie’s Free Range Eggs. Nellie’s is the nation’s first Certified Humane egg producer meaning their local farmers are held to the highest standards of humane animal treatment, safety, and environmental sustainability to ensure they provide families with wholesome, nutritious eggs at a reasonable price. All eggs are free of antibiotics or hormones and more importantly, all their hens are free to roam.

I think it’s awesome that Nellie’s partners with small Farmers who share their same beliefs. This means that their hens love spending their days in the fields in sunshine and laying nutritious eggs that simply taste better than factory-farmed eggs.

    I love to make scram led eggs with FF refried beans, a little onion, pepper, mushroom and veggies and topped with a bit of cheese

    Another way I like eggs to make a simple dinner is a riff on the classic holiday breakfast casserole. I start by cubing up some grainy bread, spreading it out in a baking dish, adding some veggies and cheese and maybe some diced ham or sausage, and pouring in some scrambled up eggs. Let the bread soak up the eggs then bake through.

    I enjoy french toast made with low calorie bread, a scrambled egg, vanilla and cinnamon, browned in a frying pan sprayed with non stick spray and topped with low sugar maple syrup.

    We love our egg bakes on weekends…but during the week when time is short we scramble those babies up with whatever is on hand!

    What we call loaded scrambled eggs. Scrambled eggs with onion, green pepper, celery, sometimes ham, and a little shredded cheddar cheese.

    I love a frittata on the weekends or weeknight dinners with reduced fat cheese, Danish ham and loads of fresh veggies like red pepper, broccoli, mushrooms and onion.

    I scramble eggs every morning for breakfast! I place the eggs, a little bit of water, and also some salsa in the non-stick pan, then whip it up with a fork to blend it altogether and incorporate some air to make the eggs fluffy. Toast one slice of whole grain bread and I have a healthy breakfast that is so good and keeps me full for hours!!

    I LOVE poached eggs – either on toast or with lentils and asparagus (seasoned with a little red wine vinegar, Frank’s Red hot with salt and pepper)

    I have two hard boiled eggs every morning with truffle salt, on the weekends I make them over medium but recently tried them sunny side up. I also love to make homemade egg bites like at Starbucks but low carb.

    I like fried eggs. I always make sure the yolk is fully cooked. If the yolk is still runny, I keep cooking!!! My wife likes the yolks runny, and I always joke that I will be left a single father when she gets salmonella.
