Another way I like eggs to make a simple dinner is a riff on the classic holiday breakfast casserole. I start by cubing up some grainy bread, spreading it out in a baking dish, adding some veggies and cheese and maybe some diced ham or sausage, and pouring in some scrambled up eggs. Let the bread soak up the eggs then bake through.

I enjoy french toast made with low calorie bread, a scrambled egg, vanilla and cinnamon, browned in a frying pan sprayed with non stick spray and topped with low sugar maple syrup.

I scramble eggs every morning for breakfast! I place the eggs, a little bit of water, and also some salsa in the non-stick pan, then whip it up with a fork to blend it altogether and incorporate some air to make the eggs fluffy. Toast one slice of whole grain bread and I have a healthy breakfast that is so good and keeps me full for hours!!

I have two hard boiled eggs every morning with truffle salt, on the weekends I make them over medium but recently tried them sunny side up. I also love to make homemade egg bites like at Starbucks but low carb.

I like fried eggs. I always make sure the yolk is fully cooked. If the yolk is still runny, I keep cooking!!! My wife likes the yolks runny, and I always joke that I will be left a single father when she gets salmonella.
