Happy Friday all! I am so excited for the long weekend and actually for September to start. The past couple of days I’ve been digging my zero point salsa eggs for breakfast.
2 scrambled eggs topped with homemade salsa that I made with all my work veggies.I decided that I’d earn my Starbucks today by walking to get it.
5K steps later and it was worth it!
Grande iced nonfat latte with caramel on top (3 sp)I fit in another walk at lunch heading to the post office and back.
The Husband actually made my lunch up last night to surprise me so I didn’t have to pack it today.
Romaine, sweet peppers, tomatoes and cucumber topped with 3 oz Buffalo chicken bites and ranch (7 sp)With a lot of watermelon for dessert.
Tonight’s dinner was randomly created tonight based on what we had in the fridge.
I love sausage, peppers and onions. I love cheese tortellini….but what you all may not know, I love sauceless pasta. The Husband feels like all pasta requires sauce. I can appreciate both saucy and not.
While the water boiled and the tortellini cooked, I chopped up a bunch of peppers including a jalapeno, zucchini and onion. I sauteed them for 4-5 minutes in a little olive oil then set them aside.In the same pan, I browned 4 roasted garlic mozzarella chicken sausages for 4-5 minutes.
I added the veggies back to the pan.
Turn off the heat and stir in the cooked tortellini, sea salt and pepper.
Add 1/2 cup pasta water and 1 oz parmesan stirring to melt the cheese and mix the flavors.
Top each heaping 1 cup scoop with a little parmesan and freshly chopped basil (if you remember to use it).
Seriously no sauce is needed as this pasta is packed with sweet peppery goodness, cheesy pasta and garlicky sausage.
(7 sp) for 1/8th of the pan with extra cheese on top.Since I had points left, I had 20 peanut M&M for 10 sp for dessert. I probably should go back to girgetting about these lol.
