One Thai-riffic Day…

Hi all! This AM I was up early sans my workout for some meetings a few towns over.  In my head, I thought I’d be up earlier to C25K, but that did not happen. I traded it for a 5 mile hike later in the day through the vineyards in the sunshine. Today’s weather was perfectly warm and full of blue skies like a spring day.I whipped up a quick healthy Eggroll with a cutie before heading out. 3 sp. I did pick up a Tall Nonfat Cappuccino for my hour drive. 2 sp.I met my hiking friend for lunch in Napa at Mini Mango where we shared done Thai-riffic food!

I had 1/2 this papaya salad for 0 sp.2 Shrimp Lettuce Wraps that are sweet, sour, smoky, gingery and super fresh for 1 sp.3/4 cup of See Ew Noodles – 5 sp and yep, I was totally the girl picking out all the veggies.Half of these Tiger Prik Prawns with 1/2 cup rice for 6 sp.To balance everything out, we added some green beans and mushrooms to the mix. 1 spAt the end of lunch, she gave me the other part of my birthday gift she got for me. She had an apron and matching kitchen towels made for me. I have been so completely spoiled this year.

How adorable are these?!?! I love them.I wasn’t sure if I’d have dinner or not as we had a pretty big lunch. As I was heating up the leftover steak sandwiches for The Husband, my hunger kicked in. We used the rest of the sweet french bread to make pizza. So easy and fun.

I cut the French bread in half and quartered it. Topped with pizza sauce 1/4 cup Trader Joe’s Lite Mozzarella and 3 Turkey Pepperoni per slice. Broiled for 4 minutes.

I had 2 quarters like this for 5 sp. Fun fact – you get 24 Turkey Pepperoni for 2 SmartPoints.

    What a great birthday celebration – also, it WAS a beautiful day in the Bay Area as well. I think knowing what to order at a Thai restaurant is important We have a local Thai place that is very good but I’ve never seen any items like you had.
