Happy Monday all! This morning I was up early to get my day started. This week I am starting my C25K workout on Tuesday as I had a fun, long hike planned for today. Truth be told, I am not sure my legs could handle both in one day.
Breakfast was this crispy hash brown square with 2 fluffy scrambled eggs for 4 SmartPoints.I met my friend at Vasquez Deli for the best ever crunchy chicken tacos x’s 2 (10 sp) before we headed out for a little shopping and our hike of the day. I did have a little cheese quesadilla too (3 sp).
We looped the lagoon and did this Tower Challenge hike. Here are a few snaps as we hiked to the top. This is becoming one of my favorite hikes.
Dinner tonight was one of The Husband’s favorite meals – Best Ever Steak Sandwiches. You get 1/4 of the entire recipe for 8 Smartpoints. I served my sandwich up with butternut squash fries plus a few of his mini tater tots. (2 sp).
