Hi all! How was your weekend and more importantly what are you cooking up this week? Saturday we tackled our Todo list, had lunch at Red Robin and saw the Equalizer 2 which was very good. I also got spoiled with The Husband cooking us dinner.
Two fun facts about Red Robin – the ensenada chicken platter with 1 chicken breast is only 5 WWFreestyle Smartpoints and if you want a burger, save points by ordering it protein style (lettuce wrapped no bun) with unlimited broccoli versus fries. That is if you can convince yourself to eat broccoli over fries. I got the platter lol.
This morning we we grabbed Starbucks on our way to the Alameda Antique Fair. I had a grande iced nonfat latte with caramel on top with a banana (3 sp).I don’t mind spending hours walking the faire as I listen to my audio book while getting in my steps. It makes The Husband happy and bacon, egg, pico de gallo breakfast burritos make me happy. We share it and half is 4 sp.On our way back into town, we had lunch at Buckhorn Grill. I traded in my usual salad for BBQ chicken, veggies and a side salad with honey balsamic. (?5 sp).I snacked on watermelon in the afternoon and went with a simple dinner to satisfy my pizza craving.
I split my pita in half and topped it with tomato paste and sauteed peppers, onion and mushrooms.Then, I layered Trader Joe’s Lite Mozzarella (1 oz = 1 sp) and a little pepperoncini, jalapeno and 5 Turkey Pepperoni (all zero points!)Finish with a little parmesan, fresh tomato and oregano.I had actually made up extra for lunches but The Husband loved them so much there are not any left lol. Bake at 425 for 7-8 minutes.Slice each half into 4 slices….meaning you get 2 halves or 8 slices of pizza for 7 Smartpoints.
