Hi all! I have finally had a chance to come up for air to play catch up with you all. This past week was such a whirlwind of a week getting ready to head to France, making sure all birthdays and life/work were covered while we were away. Below is a few highlights of some of my favorite things of the week I wanted to share.
I have been digging a new 1 WWFreestyle SmartPoint Veggie Scramble that is do easy to make.The secret ingredient is this Clever Foodies Scrambles – Veggies for your eggs.
These egg mixes contain all the herbs and veggies you need to make delicious scrambled eggs, omelettes and quiches.
The best part is they are Zero Point additions.Just grab a couple of Nellie’s Free Range Eggs, a splash of milk, dashes of salt, pepper and a little parmesan. Scramble and go.
It doesn’t really look pretty but I promise when cooked it’s better and is delicious. I added 1 Tbsp fresh parmesan to make my scramble a little cheesy.
I got very spoiled last week with sushi X’s 3. Once for fun at Yokoso in Walnut Creek then twice at Mikunis – a business lunch then with my sushi buddies.
Despite the craziness, I did manage to whip up a new recipe for Cheesy Potato Pierogi’s in a creamy mushroom wine sauce. Interested in the recipe?

I love that they are made with chicken breast, but, they are so perfectly round I call them chicken balls lol.We had our first fall pick at work and I scored so much squash. I mainly picked this spaghetti squash, carnival and red kuri squash for my family.
I bought some new books too. The first book in the new Weight Watchers AKA WW Healthy Kitchen series: The all new chicken cookbook.
It has several fantastic sounding recipes especially for Asian food. I can’t wait to try a few of them out.I bought two new books for our trip too.
I can’t wait to read B.A.Paris new book, The Breakdown. I loved Behind Closed Doors.We have officially made it to Germany then over to France. I can’t wait to explore Valence this weekend.
