Shopping My “Fridge” & This Week’s Menu

Happy Monday all!  I WISH I remembered to wear my pedometer helping our friends move yesterday.  We worked the entire day from about 9 am until 11:30 pm, but, we got everything done!  I would’ve LOVED to know how many miles I travelled, I know my legs, arms and probably muscles I didn’t know I have are feeling it today.

I took today off from working out and I am really glad I did because I am just tired today.

Tonight’s post is going to be just “highlights” and My Weekly Menu.

I am definitely ready to kick up my heels and watch JP The Bachelorette!

SUNDAY’S HIGHLIGHTS

Stopping in the middle of driving because we saw Hot Air Balloons taking off in the middle of the farm fields.

I am pretty sure I had 3 or 4 plates just like this all throughout the day.

Moving ALWAYS involves Pizza.  I wasn’t picky when they ordered pepperoni and garlic chicken only…I just gave The Husband the pepperoni’s, patted my slice dry and enjoyed every cheesy, doughy bite.  I earned it!

I have to admit being tired today has completely impacted my hunger and so my eating has been sort of random.

I had 3 cups of coffee for breakfast with the last 2 Red, White & Blue Cookies and fruit.  Don’t judge…at least they included oatmeal Winking smile

Then, I took The Husband Chipotle ~ we sat outside and enjoyed out 75 degrees of sunshine.

This week I am really focused on using what we have on hand and shopping from our fridge and freezer ONLY. 

It was really hard to resist going to the grocery store, but, I know how I work.

If I go, I buy more than what is on my list…if I have watermelon, I will not touch our other fruit.

It’s one week and EVERYTHING sounds good when you say you “can’t” go to the grocery store…it’s a great trick if you are in a slump LOL.

So the “RULES” are no trips to the store, use what I have on hand, improvise and my reward is going to Thursday’s Farmer’s Market.

II can do it, I can do it…..Open-mouthed smile

 

HERE IS WHAT IS ON THE MENU THIS WEEK

* Spaghetti with two types of pasta

* Pizza Puffs & Salad! (although Tracy claimed this recipe as one I need to make with her)

* BBQ Chicken, garlic or yucca fries, grilled asparagus

* Something with pesto ~ maybe gnocchi, sausage, kale?

* Shrimp Scampi or Grilled Shrimp Salad

*  Tacos!, 16 minute beef & bean burritos or Beef & Bean Enchiladas

* CEiMB ~ Chicken Pepian over cilantro lime brown rice with salad

* If I can find good cherry tomatoes at the Farmer’s Market, I am all over this (made healthier) Summer Garden Pasta with a no cook sauce!

* LUNCHES ~ Vegetable Gyoza with Edamame with Spicy Peanut Slaw

I already made my lunches for the week! MMMMM, can’t wait!

    That’s funny because that’s exactly what I’m doing right now due to lack of funds! So far it has not impacted my diet for good…I find myself not having as healthy of options. >.< At least that's how it feels. I shall try harder!

    You’ve inspired me to shop my fridge & pantry…which I try to do every week…especially during hurricane season…I’m always saying I’m trying to clean out the freezer, but I never do, lol! I’ve been waiting for your menu, it’s my favorite post, well almost 🙂 I did make wonderful citrus fish tacos from Myra Goodman’s Earth-Bound Cook…they were easy and reall delish! The pizza puffs look yummy!!

    I’m trying to do the same with my fridge and freezer this week, Danica! I’ve been in a cooking slump anyway, so it will be fun to find some “freezer surprises” that I don’t have to cook! LOL!

    I’m SUPER excited to see the Pizza Puffs and I hope you & TJ include us on this creation! I’m anxious to find out how they come out points-wise and taste-wise of course 🙂 Thanks for posting so often, I understand that not everyone has time to “blog” but I love that you never go days without posting!

    I have a hot air balloon story that’ll make anyone never want to ;P …but they are cool to look at. …and that’s what I’ll be doing with them from here on out. Looking. lol

    This week’s menu:
    Mon: leftover enchilada cassrole from Fri’s Mexican feast
    Tues: turkey cutlets w. my merlot sauce (from the freezer) & salad
    Wed: pizza & salad
    Thur: grilled fish & veggies
    Fri: TBD

    Hi Danica. LOVE the hot air balloon pics. And holy smokes, we are kindred spirits on this one. I JUST said to my husband last night that I’m not shopping until the weekend and we’ll use what we have in the fridge/freezer and cupboards. (I’m like you, I can go into the grocery store with a list, but usually there are a few items extra!) I’m not exactly sure what we’ll have over the next few days, but it’ll be fun coming up with some new dinners. We can both do it! (and love the reward of the farmer’s market!)

    I love the idea of shopping from your fridge and freezer. I need to do more of that. It’s easy to buy food and even easier to forget it’s in there somewhere. I’m so glad you got your oatmeal in this morning. You’ve made the cookies look so good, I made another batch this morning!

    I copied the recipe for the pizza puffs. I’ll have to run it through the recipe builder to figure points, but it sounded good. I don’t like pepperoni (I think I’m the only one in the world!), so I’ll use diced ham or turkey sausage or something. I don’t know why some really tiny diced veg wouldn’t be good in there. Onions or red pepper or something. Might doctor a few up that way too!

    Hi Sarah,

    Here is how I make the slaw.

    * 1 cup organic broccoli slaw

    * 1/2 cup organic carrots

    * 2 Tbsp Trader Joe’s Spicy Peanut Dressing

    * Sprinkle of crushed red pepper flakes
