Happy Friday everyone! Today was awesome because….the weekend is here, I got a ton of todo’s checked off my list and everything I ate was absolutely delicious.
What made today awesome for you?
Breakfast was my usual – Healthy Eggroll (Mission Extra Thin Yellow Corn Tortilla, Sargento RF cheddar, Fried Egg, Sriracha) – 5 sp plus 1/2 a nectarine.
My liquid energy – Grande iced Nonfat Latte with caramel on top (3 sp)
One more awesome thing about today – I only had to work a half day so I brought The Husband lunch.
Jersey Mike’s Mini #7 Turkey Provolone Mike’s way (11 sp), 1/2 bag Miss Vickie’s BBQ chips (4 sp)
Mid afternoon snack – Watermelon & a Trader Joe’s Lite String Cheese (2 sp)
Tonight’s dinner is the Best Blue Apron meals we’ve had yet. These Spicy Beef Tacos pair so week with the sweet, creamy corn and fresh tomato salsa. I’m definitely making this recipe again.
It goes together pretty quickly once you prep your produce.
My fresh cherry tomato salsa consisted of tomatoes, 1/3 jalapeno, 1/2 a like juice, 1 garlic cloves, sea salt & black pepper.
The quickest way to cut corn off your Cobb is to get a large bowl then slide your knife along. It keeps all your corn in one place and makes for easy slicing.
I sauteed my corn in nonstick spray for 1-2 minutes to get it a little browned.
Then, whipped up the “creamy corn”, using sour cream, zest of a like, sea salt & black better.
I love the idea of warming your tortillas before you cook the meat. Store them in a piece if foil with a damp paper towel to keep them warm and soft.
After Browning the ground beef with 2 cloves garlic, I drained the meat, wiped the pan cleaned and seasoned it with garlic salt & black pepper.
I’ll admit, I was skeptical that just adding Chipotle paste, tomato paste and water would give this enough flavor. So, I added the juice from my salsa since I wasn’t using it.
You know what – it totally works! Smoky, spicy, tangy goodness. Yep, I’m even saying that about beef!
Layer it up. Tortilla, creamy corn….
Spicy, smoky taco meat….
Fresh tomato salsa and a sprinkle of cilantro.
All with a squeeze of line to finish. I wish I could just give you all a bite right now – it’s that good.
I kept thinking street tacos even though they are not and The Husband didn’t freak out I put corn IN his tacos. In fact, he was bummed there were not any more after his four lol.

Cannot wait to try the tacos. Any idea how many servings and point value for just the corn is? Thinking of doing a fajita style ground beef over a native tomato and the creamy corn.
