Surprises & This Week’s Menu

Happy St. Paddy’s day all! What is one thing you did to celebrate today? I made The Husband totally happy by Slow Cookin’ Corned Beef and Cabbage for his dinner tonight.

This weekend has been pretty good starting off with a 1.6 lb weight loss at weigh in this week! The Husband also surprised me twice today but more on that in a few.

We kicked off our day with Eggwiches plus 1/2 an orange and coffee eaten while planning our next vacation (3 sp).I told The Husband that this year for every antique fair we go to, he had to go on a hike for me. Little did I know that he would actually agree to do the Tower Challenge with me!

Today was such a beautiful day – 74 degrees of sunshine and a little breeze.Look at the smiley rock we saw on the trail.Momma cow and her baby……it helped to keep his mind off the climb 🙂You gradually climb from 288 feet to 800ish when you get to the tower. This is a view from the top.His victory picture…..it was actually more like him saying, I must really love you to do this like the entire way up…I’ll take it.

I should’ve turned us around so you could see the lake but I didn’t think of that or my no make up pictures oops!Surprise #2 I told him we could eat anywhere he wanted and he picked my favorite Thai Place….Buddha Thai and he liked it!

I had 2 full fresh spring rolls (4 sp).Plus about 1 cup of this cashew chicken (it’s just like Thai Basil chicken) with 1/2 cup brown rice (6 sp).Plus I stole about a cup of his drunken noodles (none of the beef) 6 sp.For dinner, I made us these 2 Smartpoint salads (balsamic vinaigrette and sunflower seeds make up the points).Slow Cooker Corned Beef & Cabbage for himAnd two Zero Point Southwestern Egg Muffins. I followed this recipe using 99% lean ground turkey breast and no cheese.21 Daily WWFreestyle Smartpoints, 14K steps

2 rollovers with a banana/grapes planned for snack later if I get hungry.

HERE IS WHAT IS ON THE MENU THIS WEEK:

  • Teriyaki Sausage & Veggie Kebobs, Rice
  • Instant Pot Swedish Meatballs over rice with green beans
  • Greek Tortellini Pasta Salad
  • BBQ Chicken Ranch Salad
  • WW Teriyaki Burgers, Sweet Potato Fries, Asparagus

      Awww, thank you! We are lucky with our weather – today was 78 and even though it will rain again it’s much better than the 30’s 🙂
