The “Healthy” Plate

Hi all! How was your Wednesday? Today was the first chance for me to get caught up at work after a very busy start to January. Even though I still have a million projects, I love the feeling of being organized with my list ready to go.

This morning, I was out if the house early.

Grab n Go Breakfast – Sandwich Bros Turkey Sausage and Egg White Flat bread (4 sp) plus grapes.Don’t worry, I still made time for my tall nonfat dry cappuccino with caramel on the foam (2 sp). I also had a banana to keep myself in check at lunch.

We had a working lunch today at Cafe Bernardo. I have been looking forward to this meeting because their menu looks amazing! Yes, it’s all about the food but our conversation was good too lol.

The starter was this seasonal Pizzetta Bread – Butternut squash with caramelized onions, thyme, walnuts, fontina cheese and balsamico.

It was so good – I feel proud that I stuck to one slice….I could’ve eaten it all lol. (5 sp)I did taste the sharables that came out with our lunch when they passed by. I am so glad they were not really within reach or I would’ve kept going back for more.

I am counting 4 sp for my tastes.My Pan Seared Chicken with Autumn Vegetables was so freaking good. Everyone kept saying I ordered the “healthy” plate but honestly it tasted decadadent and was fun to eat with all the textures/flavors.

I ate it all 5 Smartpoints for the nuts, glaze and possible oil for roasting.I passed on dessert and had a short Americano for zero points instead.

I modified this recipe for Minestrone with Kale and Turkey Sausage for dinner tonight. Here is my healthied version.

I sauteed 2 Jennie-O Hot Italian Turkey Sausages in 1 teaspoon olive oil for 4 minutes. Once it was cooked through, I added the onion, garlic and carrot cooking for 5 minutes.Top with 1 bunch of kale, roughly chopped cooking until wilted, about 2-3 minutes.Add diced tomatoes, white kidney beans, pasta, 1 Tbsp freshly chopped rosemary, 4 cups chicken broth and 3 cups water. Bring to a boil, reduce heat and simmer for 4 minutes until the pasta is cooked through.

Season with salt, pepper and crushed red pepper flakes.It makes a ton of soup, about 10+ cups and the entire pot is 21 WWFreestyle Smartpoints.

I had a heaping 1 1/2 cup serving for 3 Smartpoints. Tasty, healthy and very filling.Instead of topping with croutons, I made homemade garlic bread (3 sp).28 Daily WWFreestyle Smartpoints, 7K steps
