Hi all! How was your weekend? My weekend was pretty good. I had a solid on track week and I am happy to say the scale showed it with a 1.6 lb loss.
I was up early this morning to get ready for my first hike of the year with my friend. Before heading out, I whipped up this Eggwich with berries.
1 slice butter bread topped with 1/2 Tbsp whipped butter and a fried egg (3 sp).I grabbed a tall nonfat cappuccino for the drive (2 sp).
Our hike today was the Tower Challenge. I honestly thought the climb to the top was going to be so hard but it wasn’t bad at all.
The view from the top was awesome and the cow family was too cute.We earned our lunch at Buddha Thai Bistro.
My favorite thing – the fresh spring rolls. I had half the plate (4 sp).We shared the drunken shrimp noodles – so so good. (7 sp for my cup plus).
Plus green chicken curry with brown rice. I had about 1/2 cup over 1/2 cup brown rice (8 sp).
I balanced out my day with dinner at Chicago Fire and this Greek Salad (4 sp).
