Hi all! How was your week & weekend? My week was super stressful but I’m proud that I took it all in stride, literally, fitting in 3 Start to Run workouts, 2 hikes and daily lunchtime walks. I kept my eats in check and lost 2.2 lbs this week – success!
I did fit in a 2 mile walk around the lake yesterday and today we got in 10K steps walking the Alameda Antique Faire.
I grabbed a tall nonfat iced latte for the drive (2 sp) and had 1/2 this bacon, egg & Pico de Gallo breakfast burrito (4 sp).We had lunch on our way back at Yokoso Sushi.
Miso soup (broth only) plus a house salad (2 sp).?2 Gyoza for 2 Smartpoints.Then, we kinda split these two rolls. I had 7 pieces for 7 sp.
Tuna Steak (spicy crab, ahi, avocado, green onions, tobiko, sweet & spicy sauces)
Pleasant Hill Roll (tempura shrimp, crab, ahi, yellow fin, avocado, special spicy sauce) I finally got back in the kitchen today and cooked a real recipe.
After cooking up a few Instant Pot Hard Boiled Eggs, I put together this easy Italian Tortellini Pasta Salad.This salad is so fun to eat with all the different textures and flavors. I love the sweet tomatoes that pop, the salty, brined veggies, fresh mozzarella, crunchy veggies and cheesy tortellini.
