WI, Weekend Recap & Weekly Menu

Hi all! How was your weekend? We had a busy, but, fun weekend. We kicked off Saturday with Weight Watchers where I lost another .6 lbs. It is really nice to see the scale consistently going down as a reinforcement that my hard work is paying off. We had breakfast out and Starbucks with The Husband’s friend.

To celebrate our 70+ degree weather, we BBQ’d following this simple Sausage, Pepper, Mushroom Onion Kabob recipe. I no longer thread the kabobs as it is much faster to toss everything in the grill basket and shake as it cooks. The trick is to cut your sausage into equal pieces as that’s the only thing you have to count. I cut mine into 6 pieces.

Saturday Snap Recap:B: 2 eggs over medium, 2 pieces bacon, 1 piece dry sourdough and 2 hash brown bites (5 sp)

S: Tall Nonfat Cappuccino with caramel on top (2 sp)

L: English muffin pizza: 1 English muffin topped with pizza sauce, 5 Turkey Pepperoni, 1 oz Trader Joe’s Lite Mozzarella and jalapenos (5 sp). I also had 1/2 oz Lay’s Kettle BBQ chips (3 sp)

D: 1 1/2 cups Teriyaki Chicken Sausage Kabobs (4 sp), 1/2 cup Trader Joe’s Organic Brown Rice (3 sp)

DS: 2 Dove milk chocolate caramels (4 sp), 4 Peanut M&Ms (2 sp)

Today we were up early to head to the Alameda Antique Fair the Farmers Market and lunch at Buckhorn before the Superbowl festivities started. I really need the Lay’s Kettle BBQ chips to go as they call my name all day! I had some for snack and balanced out dinner with a delicious BBQ Buffalo Chicken salad.

Sunday Snap Recap:B: Sandwich Bros Sausage Egg White Flat Bread (4 sp), cutie

S: Tall Nonfat Cappuccino with caramel on top (2 sp), WW Peanut Butter stix (2 sp)

L: @Buckhorn Grill – Yik Yak Salad with chicken & the dressing on the side (5 sp), cornbread muffin (4 sp)

S: Orange, strawberries & WW Lite Pepper jack string cheese (1 sp)

S2: 1 Svg Lay’s Kettle BBQ chips (4 sp)

D: BBQ Buffalo Chicken Salad ( romaine, carrots, celery, cucumber, tomato, sweet peppers, green onion, kidney beans, grilled BBQ chicken tenders, 1 Svg Homemade Low-fat ranch dressing & Frank’s Red Hot (1 sp)

    How are you doing on Freestyle? Do you have any tips or suggestions? I am a little concerned and fearful of the new program, Love your recipes and the pictures from your hikes! So different than our mountains in western NC!
