Happy Monday all! I honestly couldn’t wait to get through my morning routine just so I could dive into this pesto infused Sweet Pepper, Tortilla & Egg casserole. It was so hard to resist having it last night as it smelled so good cooking. I actually offered it up for dinner but The Husband wasn’t interested lol.

I knew I’d be starving by the time I returned from my walk so I snacked on a banana and Jarlsberg Mini Swiss cheese before heading out (2 sp).
We discovered a new trail walking today that lead to this park. It was a beautiful and partially shady walk which helped with the heat. I love all the walking trails by our office.

I made Pinwheels for lunch that were centered around using this Trader Joe’s Olive Tapenade. I think this would be delicious tossed with pasta or on pizza too.
La Tortilla Light Flour Tortilla topped with 1 Laughing Cow Spicy Pepper jack wedge, 1 Tbsp Olive Tapenade and 2 oz honey ham (5 sp).
Sliced into pinwheels and served with cucumber chips.
With watermelon for dessert.
Late afternoon I snacked on these (4 sp) and 2 Tbsp pistachios (2 sp). I probably should’ve eaten my fruit and nuts but I really wanted these too.
The Husband actually picked this Vegan Weight Watchers Chopped Salad out of my WW Favorites cookbook this weekend. I have to admit I initially was skeptical about raw zucchini but it’s actually really tasty.
This salad comes together in minutes and gets tastier the longer it marinates. To the mix I added fresh parsley and a dash of honey.
You get a big 1 cup serving for 1 Smartpoint. This salad is so fresh and satisfying – tangy, crunchy and sweet with hints of garlic.
Served up with one BBQ pork ribs (4 sp).
I had one of my Cinnamon Banana Muffins for dessert (2 sp).
