Hi all! How was your weekend? Our weekend was so fun even though it was non-stop and I need another weekend to recover lol. Saturday started off at my Weight Watchers meeting where I lost another .8 lbs. I’m happy with that considering I fully enjoyed a Thai day and work BBQ last week dipping into my weekly points.
After the meeting, we fueled up for our Gold Panning & Hiking trip at Huckleberry’s. I had my usual breakfast that did not disappoint.
We celebrated my sister’s birthday with a picnic by the river where we had turkey sandwiches and I made this fiesta salad plus a Taylor Farms Mediterranean salad for sides.
I also made this Weight Watchers Strawberries & Cream Roll up cake using Huckleberry jam (her favorite) with strawberries. I cut it into much smaller pieces than the recipe notes. It’s delicious and in a strange way reminds me of Twinkies.
After relaxing in the shade and skipping rocks on the river, we headed out for a hike to find “gold”.
It was so hot outside but the river was so cold. I stayed in the shade and my heart smiled watching my sis and husband help my nephew pan for gold.
While we didn’t find any gold in the river, I did hit the jackpot fishing 😉 We took my mom to Red Hawk Casino for a little gambling and I have to say this might be my favorite new slot machine.
We finished the day with dinner at Wally’s Pizza Bar. I’m proud I didn’t get pizza or pasta and ordered their large Greek salad with shrimp.
It’s not really possible to eat that many olives or feta but it was fun trying.
This morning we were up early to head to Maggiore Farms #5 to pick cherries. It is actually pretty easy to pick cherries and it’s only $3.50/lb. We managed to pick about 7lbs and we probably ate a lb trying everything? out. So fun – I totally want to do it again.
The cherries in my hand are Coral Champagne and they are so sweet, crunchy, tart. And they are really big.
On the way back, we stopped at HD Burgers and More where The Husband got his burger fix and I got this delicious BBQ chicken salad.
Dinner tonight was a spin on my Individual Seven Layer Dips & Chips recipe.
Layer 1/4-1/2 cup fat free refried beans then top with salsa & 1/2 cup turkey taco meat. (Between 3-4 Smartpoints)
Top with 1oz Lite Mexican Shredded cheese and bake about 3-4 minutes until the cheese is all melted. (Add 2 Smartpoints)
Top with your 0 point fresh ingredients – romaine, tomatoes, green onions, jalapeno, hot sauce.
Then scoop up with a batch of homemade chips. It’s definitely worth it to make your own chips as you get 24 chips for 5 Smartpoints – the same points as 10 – 12 store bought chips.
