Hi all! How was your weekend? Ours was packed but so, so fun. Friday night we had a delicious and easy Weight Watchers WWFreestyle Vegetarian Pizza that I had to share with you all.
The only deviation I made was to add a splash of balsamic vinegar to the fresh arugula on top. 8 WWFreestyle Smartpoints for the entire pizza and it’s super filling.After my Weight Watchers meeting on Saturday, I headed over to C Casa in Napa for a potato & egg breakfast taco that was amazing.My next stop was a car wash then the Farmers Market where I stocked up on so much stuff for the week. I also picked up a few things at Trader Joe’s.I met my hiking buddy for a fresh and spicy Thai lunch at Buddha Thai Bistro before we hiked.
We looped the lagoon stopping to snap pictures of this cute family.Then, hiked to the top of the tower. It was tough but not as hard as I thought it would be and I think chatting the whole way definitely helped. It felt great to get to the top and chalk up a 20K+ step day.This morning, The Husband and I headed out to breakfast at Huckleberry’s where I got my usual.
2 eggs over medium with 2 pieces bacon, 2 bites of potatoes and 1 slice dry sourdough toast (5 sp).I needed a Starbucks today after yesterday’s workout lol.
Tall Nonfat Cappuccino with caramel on top (2 sp).After we did a little shopping, I planted the new seedlings I got from work and cleaned house.
I whipped up a fast Egg Salad sandwich (2 eggs, 1 tsp mustard, 1 Tbsp Lite Mayo, s&p, paprika) for 1 Smartpoint then put it on top of a 2 Smartpoint slice if butter bread. My side was 1 1/4 cups Taylor Farms Asian Mix (5 sp).After lunch we went to see the movie Blockers! You all seriously have to see it – it was so hilarious it brought us both to tears from laughing so much.
My post movie snack was a bowl of Farmers Market fruit.He was in charge of dinner and did a great job. 2 oz New York steak (2 sp), mushrooms (1 sp), asparagus.While he made dinner, I made a batch of these Skinny Double Chocolate Peanut Butter Muffins for his lunches.
I had one for dessert for 7 sp. They are super rich and chocolatey but not really peanut butter. Still tasty and he devoured two already.25 Daily WWFreestyle Smartpoints, 13K steps

- Asian Turkey Lettuce Wraps
- Slow Cooker Salsa Chicken Tacos then nachos
- Shrimp, Vegetable & Lime Chopped Salad
- Cheesy Stuffed Turkey Burgers, Greens
- And I am thinking this Baked Tortellini Casserole needs to be on our menu soon.

The brand was called Athena and I found them at Walmart. The ones at Trader Joe’s called lavish wraps are not bad either.
